Ingredients

  • 7 oz. 200 g bacon
  • 4 oz. (123 cups) 110 g (375 ml) mushrooms, sliced
  • 1½ lbs 650 g ground beef or ground turkey
  • ½ tsp ½ tsp salt
  • ¼ tsp ¼ tsp pepper
  • 1 cup (4 oz.) 240 ml (110 g) shredded cheddar cheese
  • 1 1 butterhead lettuce, leaves separated and washed
  • 8 (5 oz.) 8 (140 g) cherry tomatoes, sliced

Instructions

  1. Add the bacon to a large skillet and cook over medium heat for about 15 minutes, or until crispy. Remove the bacon from the pan and set aside.
  2. Over medium-high heat, sauté the mushrooms in the bacon fat, for about 5 to 7 minutes, or until browned and tender. Set aside.
  3. Add the ground beef, salt, and pepper. Sauté the beef (breaking up any chunks with the back of a wooden spoon) for about 10 minutes, or until evenly browned.
  4. For serving, spoon the ground beef onto the lettuce leaves and layer the cheddar cheese, bacon, mushrooms, and tomatoes on top.

    Another option for some or all of your bacon is to process it when semi frozen or very cold in a food processor until minced then mix into your ground beef and season as you like, then cook the burgers. SO good!

    I just started the 2 week challenge today and had these for supper. I made the patties and my Dad did them on the grill for me; yummy! I used Portobello mushrooms and the taste was great. I didn't miss the bun taste wise, but I did mess wise, lol. I used romaine lettuce instead of leaf lettuce and it kept breaking on me. Next time I'll try making the oopsie bread. I made two plain patties with no spices for my dogs, and they were thrilled, lol.

    I use ground Bison and because it is drier than Beef I add a couple tablespoons Olive Oil per pound of meat when I am gently mixing it. This would work with ground beef too. I also almost always cook my meats in saved (organic free range) bacon fat.

    Here's a question: do you have a recipe for home cured bacon that is sugar free? Most store bought bacon has sugar and nitrates in it, other bacon that's bought in health food stores is also cured in sugar. Even my local butcher's bacon that's cured on site has sugar in it. Other recipes that I've found online call for several cups of sugar or maple syrup. Really, really trying to avoid the s-words in all their forms.

    is this style of cooking suitable for a 76yr old male 15stone13 lbs reasonable motability and in reasonable health for age my weight is slowly increasing IHave various weight reduction methods all to no avail also height 5 5in awaiting your comments

    Why are all the servings auto set to 4 and how come you don’t specify on how much grease or oil to use to fry ??

    When I went to my Weight loss doctor and told her I was having a hard time finding the pshyllium husk she laughed at me. You can find it in any store. It really is Metamucil. Just make sure it is the generic brand, no taste and it is pure pshyllium husk. I didn't have a problem finding it then.

    I modified this recipe a bit so that I had hamburger patties. The texture of food is important to me.
    So, I mixed chopped smoked bacon, finely chopped onion and two slices of keto bread, crumbled,with the ground beef and shaped into patties.
    Cooked for 12 minutes each side and put cheese on 1 minute before serving.
    Used up some Portobello mushrooms that I had left over from a previous recipe and served the burgers on top them with salad on the side.

    Since the lettuce is being used as a wrap for this recipe, the size/shape of the leaves is more important than the weight. You will use about 3 leaves per serving.
