Ingredients

  • 1 lb 450 g of rotisserie chicken
  • 7 oz. 200 g fresh green cabbage
  • ½ (2 oz.) ½ (55 g) red onionred onions
  • 1 tbsp 1 tbsp olive oil
  • 4 tbsp 4 tbsp mayonnaise
  • salt and pepper

Instructions

  1. Shred the cabbage using a sharp knife or a mandolin and place it on a plate.
  2. Slice the onion thinly and add it to the plate, together with the rotisserie chicken and a hearty dollop of mayonnaise.
  3. Drizzle olive oil over the cabbage and add some salt and pepper to taste.

Tip!

We used rotisserie chicken for this dish, but you can use any leftover chicken. Or, pan-fry a piece or two of raw chicken if you wish. Just make sure it's fully cooked through (internal temperature of 165 °F (74 °C)) before serving.

    This recipe is for 2 servings. Your shopping list would depend on how many servings you have selected and the other meals included.

    Instead of the rotisserie/baked chicken? Yes, as long as the ingredients in the curry chicken are keto friendly (no sugars, flours or starches).

    There is nothing else to do other than what's listed in the instructions. This is basically a cabbage salad.

    A rotisserie chicken is just a chicken cooked on a rotisserie in an oven.. just add any baked chicken.

    I'm not a fan of raw cabbage so I subbed out the 2 tbsp of mayo for 2 tbsp of butter. Took a few garlic cloves and smashed them and cooked them into the butter until golden, then removed them and tossed them. Added chili flakes and then cooked the cabbage and onions. Finished with a splash of apple cider vinegar, salt and pepper. All keto friendly!

    Some store bought rotisserie chickens have varying amounts of sugar/dextrose added at some point. If you have diabetes or otherwise need to keep an eye on your blood sugar, keep that in mind and keep an eye on if your blood sugar is affected too much.
