Ingredients

  • 4 4 eggeggs
  • 2 tbsp 2 tbsp butter and olive oil, for frying
  • 8 oz. 230 g canned mackerel in tomato sauce
  • 2 oz. (1½ cups) 60 g (400 ml) lettuce
  • ½ (2 oz.) ½ (55 g) red onionred onions
  • ¼ cup 60 ml olive oil
  • salt and pepper

Instructions

  1. Fry the eggs in butter or oil, just the way you want them – sunny side up or over easy.
  2. Put lettuce, thin slices of red onion and mackerel on a plate together with the eggs. Season to taste with salt and pepper. Drizzle olive oil over the salad and serve.

    I've now gone back in eating mackerel in tomato sauce, easily my favourite way to eat oily fish. Ruddy lip smacking delicious

    I just ate this for breakfast and it was very delicious! I would never try mackerel together with fried eggs and veggies on my own but i'm glad i gave it a try since this combination is perfect. I love it!

    Starting my Keto Diet tomorrow morning, 17.02.2020. Kicking off with this little beauty. Cannot wait to be honest with you. I have received all my required meats for the two weeks and all the necessary vegetables. I've spent the best part of the afternoon today, Sunday, emptying all my cupboards of all the unhealthy things and the fridge and freezer, invited a friend over to take home all the unwanted items, as I hate wastage, removing all temptation.

    Prepared BLTA lettuce wraps for lunch at work tomorrow and I will have the Broccoli and cauliflower gratin with sausage for tea in the evening. All these recipes I have selected look amazing, even the preparation looked mouth-watering.

    Oh well, here goes!

    Approximately 2 tablespoons should work!
