Go ahead and enjoy this keto breakfast classic for lunch. Or dinner. We've added nuts and bell pepper for a nice crunch. Why complicate things?

Ingredients

  • 5 oz. 140 g bacon
  • 4 4 eggeggs
  • 2 (14 oz.) 2 (400 g) avocadoavocados
  • ¼ cup (45 oz.) 60 ml (25 g) walnuts
  • 1 (5 oz.) 1 (140 g) green bell peppergreen bell peppers
  • salt and pepper
  • 1 tbsp 1 tbsp fresh chives, finely chopped (optional)
Serving
  • ½ cup (13 oz.) 120 ml (10 g) arugula lettuce
  • 1 tbsp 1 tbsp olive oil

Instructions

  1. Fry the bacon over medium heat until crispy.
  2. Remove from pan and keep warm. Leave the fat that's accumulated in the pan. Lower the heat to medium low and fry the eggs in the same frying pan.
  3. Place bacon, eggs, avocado, nuts, bell pepper and arugula on a plate.
  4. Drizzle the remaining bacon fat on top of the eggs. Season to taste.

Tip!

Walnuts, Brazil nuts, pecans, and macadamia nuts are all lower-carb nut choices. Feel free to swap in your favorite. See our guide to nuts for more details. Also, you can dry roast your nuts (about an hour in a 250°F/120°C oven) in batches for more crunch. Don't forget to add a little salt right after roasting!

    I'm on my own on a budget?I hate almond( it's in loads) and nuts,

    It not expensive at all, most of the ingredients are bought once, keto diet is so simple, it allows you to scramble thru your cupbosrd and fridge and freezer and you will find most stuff. And you can still be able to follow a strict keto diet. I am also on a budget and managing fine. Coconut milk is main ingredient for smoothies and I buy from Aldi and stock up it’s cheap too. Just look for recipes that you can afford. If I can do it you can too, you wil be amazed st the difference it makes to yr health. Enjoy

    Meat measurements are always given pre-cooked.

    Could the photos please match the recipe? The recipe states "1 green bell pepper" but there are three different smaller peppers on this plate.

    Hi I am trying to figure out where the carbs/protein counts are coming from on this -what is making the numbers jump so much from the other egg plate? It is more the avocado or the walnuts?
