Ingredients

  • 6 6 eggeggs
  • 2 tbsp 2 tbsp heavy whipping cream or sour cream
  • salt and pepper
  • 3 oz. (¾ cup) 85 g (180 ml) cheddar cheese, shredded and divided
  • 2 oz. 55 g butter
  • 5 oz. 140 g smoked deli ham, diced
  • ½ (2 oz.) ½ (55 g) yellow onion, finely choppedyellow onions, finely chopped
  • ½ (2½ oz.) ½ (70 g) green bell pepper, finely choppedgreen bell peppers, finely chopped

Instructions

  1. In a mixing bowl, whisk eggs and cream until fluffy. Add salt and pepper.
  2. Add half of the shredded cheese and mix well.
  3. Melt the butter in a large frying pan on medium heat.
  4. Sauté the diced ham, onion and peppers for a few minutes. Add the egg mixture and fry until the omelet is almost firm. Be extra mindful not to burn the edges.
  5. Reduce the heat after a little while. Sprinkle the rest of the cheese on top. Fold the omelet if desired.
  6. Serve immediately... and enjoy!

Tip!

Pair with a fresh, green salad. If you like to keep it spicy, serve with Tabasco or Sriracha sauce, or jalepenos on the side. Yes!

    Hi Debbie, I have been LFHC for 3 months now and just had lipids checked, all fine. Read "Big Fat Surprise" Nina Teicholz,vfor a thorough exploration of the whole heart healthy, diet-heart hypothesis, after many millions in funding and no connection between dietary animal sourced saturated fat and serum cholesterol. Its more likely the trans fats, margarines and "vegetable" ie seed oils raising LDL cholesterol, all present in vast quantities in processed food as it is cheap and easy to manufacture with.

    What about acid? I had a kidney transplant. My doctor is okay with low carb but says ketones is high in acid and could affect my kidney.

    For milk or cream, you can use coconut milk or coconut cream. For butter, you can use bacon grease or coconut oil, depending on the recipe and for cow cheese you can try feta (sheep) or goat cheese.

    That would be personal preference. I am not sure I would care for a cold omelet but if it sounds appealing to you, then you can certainly do that.

    Generally, the "light" versions of products will have more carbs and less fat, which is not a great idea.

    A "western omelette" is a diner staple, so this recreates that flavor profile. If you prefer bacon, you can use that instead. As written, this recipe still gets 73% of its calories from fat.

    Surprisingly, yes! Dairy whipped into the eggs can add a lot of volume in the omelet. Sour cream gives a nice, tangy taste.

    Yes, you can use ground beef. You can start with 5oz, as called for in the ham amount, and adjust more or less as needed.

    Hello, great recipe. But can you check the amounts. Don't think 3/4 cup is 3 oz. it is more like 6 oz, if you consider 1 cup = 8 Oz. Thank you.

    Please note that the ounces is by weight, not by volume.
