I'm sure we've all either heard it or said it: "don't play with your food!". Let's make an exception, as these small keto mice are so cute, you will almost not want to eat them. A super fun way to keep the kids busy in the kitchen and an instant success on the cheese platter. Win-win!

Ingredients

  • 6 6 eggeggs
  • 4 4 radishradishes
  • 12 12 fresh chives
  • 24 24 black peppercorn, wholeblack peppercorns, whole
  • 14 oz. (3½ cups) 400 g (850 ml) cheddar cheese, or any other cheese

Instructions

Instructions are for 12 servings. Please modify as needed.

  1. Boil the eggs for at least 8 minutes so you can cut them into halves without the egg yolks running.
  2. Place the egg halves on a plate with the sunny side down. With the tip of a knife, cut two semi-circular slits for the ears. Cut the radishes thinly and gently push down two slices into each egg.
  3. Poke two tiny holes for the eyes and push in a black peppercorn for each eye.
  4. Put a chive leaf under each egg so it looks like a tail.
  5. Dice the cheese and place next to the mice.

    How about using capers instead of peppercorns for the eyes. The thought of biting into a whole peppercorn makes me cringe.

    This would be great for a keto-friendly bento box! Instead of the peppercorns, you can use black sesame seeds or pieces of nori with some mayo to affix them to the body. This opens up so many ideas for kids' lunches, and you could also make bunnies out of these for Easter! Thank you!
