Low carb chocolate mousse
A delicious and simple low carb chocolate mousse, that you can make in just a few minutes! Dairy free. Freeze it and you'll have a great low-carb ice cream.

- 3 tbsp 3 tbsp cocoa powder
- 1 tsp 1 tsp vanilla extract
- 1 tbsp 1 tbsp erythritol (optional)

Making low carb simple
Instructions
- Let the coconut milk sit in the fridge for 4 hours or longer to separate the cream from the coconut water.
- Open the can carefully and scoop out the thick cream with a spoon and put in a bowl. Save the coconut water for a smoothie or pancakes.
- Whisk the coconut cream, vanilla and optional sweetener with a hand mixer for a couple of minutes until it thickens. Add cocoa powder and whisk some more.
- Serve in dessert bowls.
Tip!
If you put the mousse in the freezer it will turn to ice cream in an hour. Make sure the coconut milk doesn't have any other ingredients but coconut milk. If it does, it won't solidify inte the refrigerator as needed for this recipe.

We use pure vanilla extract in our recipes. It comes in liquid extract, powder or paste and they all work fine.

We haven't tried this, but I believe the almond milk won't set to the same consistency as the coconut milk does in the fridge. My experience is that almond milk will stay liquid, whereas coconut milk will separate into a solid and a liquid part. It's the more solid part you need as it whips well and gives the dessert it's texture. If you try it and it works, please let us know! Good luck!

I think we are all better off making the chocolate mousse recipe from Diet Doctor.
I eventually whipped up the liquid coconut milk with vanilla bean, chocolate and some xanthan gum and it became the right consistency.
I am starting this journey tomorrow and trying to find a desert to help me stay on track for the week. I have seen honey used as a sweetener, can I use monk fruit as my preferred sweetener? I normally use agave nectar but it has 15g carbs,so I want to find something else. Do not like Stevia or anything like it.

After reading the comments I was slightly dubious about this, I have only just completed two weeks of Keto. Mainly for IBS reasons, but if I lose a few lb's along the way I won't complain, =).
I was absolutely delighted with this recipe and I am currently eating a mousse for a well deserved treat. I have a really sweet tooth and have been craving this for a while. Though I rarely used to eat chocolate it was what I was looking forward to the most.
I bought a can of coconut milk (400g) from Asda (Amoy brand) and left it in the fridge overnight, I didn't use the honey and managed to make two lovely mousse glasses.
I didn't use an electric mixer, just mixed it by hand for a while, and it was perfect! Absolutely delicious, though am tempted to add the honey next time.
You could try almond milk but we have not tested this recipe with that substitution.
The canned coconut milks tend to have a higher fat content than the ones in the carton.
The cocoa is likely to cover up the coconut taste. This cream from the coconut milk is a pretty unique ingredient, I am not sure of a good substitute.
Hi, Janice! As the recipe indicates, you will only scoop out the thick cream from the top after it separates, so you will not be using the entire amount of coconut milk.
The nutrition information is for one serving. One serving is based on 120 ml coconut cream.
The best easy choc mousse ever. wonderfully delicious. Recipe came out exactly as it said. Super for last min entertaining for a quick dessert or anytime.
Also, a recipe that doubles up as ice cream as stated, I tried popping in the freezer and yes, it is super choc icrecream.
I used 100% Cocoa Powder, even better.
