Macadamia nuts are arguably one of the most ketogenic nuts. The only thing that could possibly make them better is — you guessed it — dark chocolate! These fat bombs are salty, sweet, and absolutely delicious.

Macadamia nuts are arguably one of the most ketogenic nuts. The only thing that could possibly make them better is — you guessed it — dark chocolate! These fat bombs are salty, sweet, and absolutely delicious.

Ingredients

  • 113 oz. (423 tbsp) 38 g (70 ml) sugar-free dark chocolate, stevia-sweetened chocolate chips
  • 1 tbsp 1 tbsp MCT oil or coconut oil
  • coarse salt or sea salt
  • 1½ oz. 45 g raw macadamia nuts halves

Instructions

Instructions are for 4 servings. Please modify as needed.

  1. Select a truffle mold, mini muffin pan, or mini baking cups with wells that are 2x1”.
  2. Place 3 macadamia nut halves in each of 8 wells of the mold or mini muffin pan or in each of 8 mini baking cups.
  3. In a small microwave-safe dish, microwave the chocolate chips for 50 seconds or until melted. Stir until smooth, then add the MCT oil and a pinch of coarse salt. Mix until blended.
  4. Spoon some of the chocolate mixture into each well or baking cup, completely covering the nuts. Sprinkle additional salt over the chocolate.
  5. Transfer the mold or baking cups to the freezer for a minimum of 30 minutes, until the chocolate is solid.

Tips

Suzanne uses Lily’s baking chips. These chocolate chips are dairy-free but are manufactured using equipment that may come into contact with dairy, so those with dairy allergies should be cautious.

Store extras in a zip-top plastic bag in the freezer for up to 6 months.

    What % of dark chocolate would you use? I find anything less than 90% has too much sugar in it.

    Looks like milk chocolate, not dark, in the photo. I use 90% dark Lindt chocolate.

    Let me give you another recipe. Don't use sugar alcohols like erythritol because it changes your gut flora in a bad way!
    If you are one off the lucky people who can't taste the bitter aftertaste of Stevia you should use it instead of honey but if you are like me
    I would just use a little bit of honey because even of you eat 100gr. it shouldn't kick you out of ketosis.

    100gr. Organic coconut butter
    10gr. Dark chocolate 85% (with normal sugar)
    5gr. Honey
    2gr. Orange zest

    These are perfect treats - very hard to believe each bomb is ONLY net carb but tastes sooooooo good!! Why would anyone eat candy??

    I just tried this. First batch (which I tried to do as a double) was a disaster. Second and third batches, which I did as only 1/4 c. of the chips, came beautifully. Now, to see if they set up in the fridge, or if they have to be frozen to harden. The "disaster" batch actually still tastes good -- like fudge that gets "sugary". Very quick recipe. A fun experiment, at least.

    I made these using butter instead of MCT oil (didn’t have any) and I really don’t like coconut oil. They turned out delicious! Even my non-keto husband enjoyed them

    These are a great treat! I use Lindt 90% chocolate. Have varied them by replacing the macadamia nuts with ground hazelnuts and also tried dessicated coconut - easier for my mum to enjoy! The Lindt is 8.4 carbs total so can easily add something different to keep them at 1 carb each. I manage to get 10 chocolates if I make them in petit four cases.

    If you are doing keto for gut health, you may want to be very careful with desserts in general as the sweeteners can cause digestive upset for some people.

    I saw your comment and I tried this recipe with cocoa butter . Yes, it worked out perfectly.
    I melted the cocoa butter along with the chocolate. The chocolate seemed to melt faster so I needed to stir in the cocoa butter to incorporate and then heated for 10 seconds more.

    It's up to you! Some people like to let them come to room temperature, but with the coconut oil they will melt faster.

    Not that I'm aware of. You could simply make the chocolate balls if you wanted!

    We have not tested this recipe with cocoa powder but they do not generally behave the same ingredients and cocoa powder likely wouldn't melt down like the chips would.

    That will depend on your carb limit and goals for the day. Each serving is 2 pieces.
