Keto French toast
Ingredients
- 1 tsp 1 tsp butter
- 2 tbsp 2 tbsp almond flour
- 2 tbsp 2 tbsp coconut flour
- 1½ tsp 1½ tsp baking powder
- 1 pinch 1 pinch salt
- 2 2 large egglarge eggs
- 2 tbsp 2 tbsp heavy whipping cream
- 2 2 large egglarge eggs
- 2 tbsp 2 tbsp heavy whipping cream
- ½ tsp ½ tsp ground cinnamon
- 1 pinch 1 pinch salt
- 2 tbsp 2 tbsp butter
Instructions
- Grease a large mug or glass dish with a flat bottom with butter.
- Mix together all dry ingredients in the mug with a fork or spoon. Crack in the egg and stir in the cream. Combine until smooth and make sure there are no lumps.
- Microwave on high (approximately 700 watts) for 2 minutes. Check if the bread is done in the middle – if not, microwave for another 15-30 seconds.
- Let cool and remove from the mug. Slice in half.
- In a bowl or deep plate, whisk together the eggs, cream and cinnamon with a pinch of salt. Pour over the bread slices and let them get soaked. Turn them around a few times so the bread slices absorb as much of the egg mixture as possible.
- Fry in plenty of butter and serve immediately.
Tip!
This recipe is based on our Low-carb mug bread, but you can use any other low-carb bread you prefer. If you don't want to measure the dry ingredients every time, prepare your own baking mix ahead. Take 10 tablespoons (150 ml) almond flour, 10 tablespoons (150 ml) coconut flour, 1 teaspoon salt and 2 1⁄2 tablespoons baking powder. Then you have the dry mix ready for 10 pieces.
As written, this recipe makes 2 servings, so 1 serving each for 2 people.

I would think a waffle maker would also work for the mug bread portion of the recipe, but it will still need to be pan fried with the batter.
Each slice is one serving, so once you cut the bread in half, you'll have two servings.
We have not tested this recipe without the microwave.

The volume of the batch of dry mix should be about 24T.
It doesn't have to be a mug! You can use a square (or round) glass dish if needed.

Coconut flour and almond flour generally bring different properties to baked goods. With all almond flour, you may find them very dense.
I am replying to your question about the oven instead of microwave. I doubled the recipe (for the eggs i used 2 whole eggs and 2 egg whites). Then melted butter (2 tbsp) in the bottom of a round cake pan and baked in the oven for 13 mins at 350. Check it after 10 mins or so to see if top springs back, if not keep baking. It tends to stick to the pan, so you really need the butter, but otherwise it turned out great!
I topped it with heavy cream whipped with a little swerve and a splash of vanilla.

Double cream will have a higher fat percentage, but it should work just fine in the recipes!
