Ingredients

  • 1 (7 oz.) 1 (200 g) medium-sized zucchini
  • 2 2 garlic clove, sliced thinlygarlic cloves, sliced thinly
  • ¼ cup 60 ml olive oil
  • 1½ oz. (1½ cups) 45 g (350 ml) baby spinach
  • salt and pepper to taste
  • 2 tbsp 2 tbsp unsweetened marinara sauce
  • 8 oz. 230 g goat cheese

Instructions

Instructions are for 2 servings. Please modify as needed.

  1. Preheat oven to 375°F (190°C).
  2. Slice the zucchini in half lengthwise, use a spoon to scrape out the seeds (don't throw them away!). Put the zucchini boats on a baking sheet.
  3. Fry the garlic in a skillet over medium heat with about half of the olive oil, until lightly browned. Add the baby spinach and zucchini seeds. Fry until soft. Season with a pinch of salt and ground black pepper.
  4. Spread the marinara sauce over the zucchini boats and top with the fried baby spinach and garlic. Sprinkle the goat cheese on top.
  5. Bake for about 20–25 minutes or until the zucchini is as tender as you prefer and the cheese has a nice golden color.
  6. Drizzle the zucchini boats with the rest of the olive oil and season with freshly ground black pepper before serving.

Tips

If you don't like goat cheese you can replace it with any other high fat cheese. For example, shredded cheddar or mozzarella are great options.

One garlic clove can be replaced with about 1/4 tsp of garlic powder.

You can serve this dish as is or add leafy greens on the side, drizzled with balsamic vinegar and olive oil.

    i'm not sure what a medium courgette means. Please can you give a a rough weight. I used two smallish ones - so 4 boats. It's tasty but not substantial so I added some bacon to it. It was a bit too much goats cheese for me, too. Not my favourite

    FYI...

    This recipe can be made using cucumbers, if you are in a daze when you shop for the ingredients and pick up cucumbers instead of zucchini... LOL!!

    It wasn’t too bad, but I suspect it would be a lot better with actual zucchini. 😏

    Delicious! I had this with the exact recipe except I reduced a bit the portion of goat cheese as I find it overpowering when you put too much. I use fresh goat cheese, which freshen up the recipe a bit. As a side I had a baby spinach salad with a Keto friendly dressing and my appetite is satisfied. Thank you for the recipe

    You could try another squash, but they are all higher carb than zucchini/summer squash. I don't think a substitute would work as well.

    I like this recipe but when it came out of the oven I was like where is my 4 Zucchini Boats because they were Soo thin and they didn't keep me satisfied for long at all. Another thing is that I substituted the Goat Cheese for Shredded Mozzarella Cheese and it came out really tasty.

    Made this tonight, added a few herbs, made my own marinara sauce as I couldn't find an unsweetened one :).

    Used 1/2 Goats feta and 1/2 Hard goat cheese (kaprakaas), really nice ! Thankyou!

    Yes. If you don't need this to be vegetarian, you could add sausage or bacon as well.

    I used Aubergine, my husband doesn't like courgette. I cut a medium sized Aubergine in half, cooked it, cut face down, in the microwave for five minutes, spooned out the middle and chopped. I brushed the 'shells' with olive oil and roasted for a few minutes while I prepared the filling. It was delicious and probably a bit more filling than courgette?

    My medium zuchini was about 9 inches long, so one half done as written except using mozarella instead of goat cheese because that's what I had, made an excellent supper. Plenty filling and simple. Yum!

    Oh my word!!! This was so amazing!!!! I love goat cheese and I just can't believe how much goat cheese was on there...I am in love!! This is my new go-to pizza recipe when everyone else is having their grain crust! This one is all veggie and with so much olive oil and cheese, it was very satisfying. Goat cheese heaven!!

    I live in France so with respect to cheese (where cheese is their culture) AND especially since it’s goat cheese (which I’ve never never really tried) I’m kind of lost...
    Also, I realize this may not be the right forum to express myself but: I’ve been eating keto with intermittent fasting for about 20 days. I just absolutely love it! Have lost 8 lbs (almost 4 kg)! This is fabulous.... and I adore the recipes here 😍😛 BRAVO!

    You can use any kind of goat cheese you prefer. The crumbly kind may be easier to work with.

    Very tasty, but I think the proportions are way out. Half a zucchini for 1 meal... doesn’t satisfy, especially after the huge portion sizes of some of the other meals, plus the amount of goats cheese is way too much for the number of zucchini. Think it needed to be kitchen tested. Will do again with different proportions.

    WOW. That was delicious. We used Persian feta (my absolute favourite) and it was amazing, but not the whole amount as it wouldn’t fit! It’s nice to have an easy meal both me and my vegetarian hubby can enjoy.

    Making this tonight. I always make my meals for a full weeks worth. I'm using mozzarella instead of goat cheese since where I live its $5/oz. 25oz at 5$/oz. Is a bit much

    Oxalates in general are not an issue for most people. If one has oxalate kidney stones then yes, oxalates should be minimized.

    It was really quick to prepare. I like goat cheese but I have never had it baked, so it was nice to find out it tastes great with a bit of crunch. It’s a rather expensive dish to make for 4 portions, so I won’t be having it too often, but I’ll keep it in my recipe book!

    I used a quarter of a pound of cooked Italian sausage (drained), chopped a ripe roma tomato (couldn’t find sugar free marinara sauce) and added Italian seasoning with red pepper flakes. Cooked the sausage first then added rest of the ingredients, Sauted till spinach was tender. Topped with goat cheese and baked. Very quick and easy dinner. Will definitely make it again.
