Keto fried herring with cauliflower mash
Another Swedish soul food classic gets a tasty keto makeover. We serve this crispy culinary treasure with creamy cauliflower mash and fragrant browned butter. Feel free to add some lingonberries for that ultimate Scandinavian touch!

Herring
- 1½ lbs 650 g fresh herring, fillets
- salt and pepper
- 1 1 eggeggs
- ½ cup 120 ml heavy whipping cream
- ½ cup (¼ oz.) 120 ml (8 g) fresh parsley, finely chopped
- 2⁄3 cup (22⁄3 oz.) 160 ml (75 g) almond flour (optional)
- 2 oz. 55 g butter, for frying
Cauliflower mash
- 1½ lbs 650 g cauliflower
- 2 tbsp 2 tbsp butter
- salt and pepper
Serving
- 4 oz. 110 g butter, browned
- ½ cup 120 ml lingonberries (optional)

Making low carb simple
Instructions
- Rinse the herring fillets and cut off the dorsal fin. Salt and pepper.
- Whisk egg, cream and parsley in a bowl. Add the fillets one by one and marinate for 10-15 minutes.
- Meanwhile, prepare the cauli mash. Cut the cauliflower into florets, then roughly chop into pieces. Boil in lightly salted water until tender. Discard the water, add butter and blend with an immersion blender. Salt and pepper to taste.
- Sprinkle almond flour in a deep plate. Bread the herring fillets one by one. You can also skip the breading completely, it will be super tasty either way.
- Fry the fillets in butter on medium high heat, 2-3 minutes on each side. Lower the temperature towards the end so the almond flour doesn't get burnt.
- Melt butter on medium heat in a skillet until amber-colored. Allow to rest for a minute so the milk proteins end up on the bottom of the skillet. You should skip that when serving.
- Serve the fried herring with browned butter and cauliflower mash. Add some lingonberries too, if you like!
