Ingredients

  • 2 tbsp 2 tbsp butter
  • 1½ lbs 650 g boneless, skinless boneless chicken thighs, cut into 1" (3 cm) pieces
  • 1½ tsp 1½ tsp garlic powder
  • 1 cup 240 ml heavy whipping cream
  • 3 tbsp 3 tbsp green pesto
  • 1 lb 450 g zucchini, spiralized
  • 8 oz. (1¼ cups) 230 g (300 ml) tomato, diced,tomatoes, diced, or cherry tomatoes cut in half
  • salt and ground black pepper, to taste

Instructions

  1. Melt the butter in a large frying pan, over medium-high heat.
  2. When the butter starts to bubble, add the garlic powder and chicken to the pan. Sauté for about 10 minutes, or until lightly browned.
  3. Reduce the heat to medium-low, and add the cream and pesto. Simmer for a couple of minutes, stirring together until the mixture is creamy and well-combined.
  4. Add the zucchini noodles and tomatoes. Toss to combine, and let simmer for about 2 minutes, just until the zucchini noodles become slightly tender, but still have some crispness. Season with salt and pepper to taste. Serve immediately.

    My zucchini was too old!! (I don't know how that happened.). However I made the same exact dish with cut broccoli and it was delicious. (I just cooked the broccoli a little longer than I would have done the zucchini.) My husband does not like broccoli, but in the sauce he actually ate it. I will be making it again with the Zoodles and also with broccoli, if anyone would like to try it that way. Thank you so much!! AND, especially thank you that you allow for serving sizes. I easily printed out the same recipe for the two of us.

    This was really fantastic! I used fresh garlic (2 cloves) instead of garlic powder, but followed the recipe to the letter otherwise. Can't wait for lunch tomorrow!

    Coconut cream should be fine, but will change the flavor just a bit.

    You can substitute chicken breast for the thighs.

    The zoodles may become soggy or mushy but other than that, it should freeze well.
