Ingredients

  • 2 lbs 900 g chicken breast, cubed into bite-sized pieceschicken breasts, cubed into bite-sized pieces
  • 12 oz. (3¾ cups) 350 g (900 ml) broccoli, quartered
  • 1 cup 240 ml heavy whipping cream
  • 4 oz. (½ cup) 110 g (110 ml) cream cheese
  • 1 tbsp 1 tbsp sambal oelek or chili paste
  • 1 tsp 1 tsp salt
  • ½ tsp ½ tsp ground black pepper
  • 5 oz. 140 g blue cheese, crumbled

Instructions

Instructions are for 4 servings. Please modify as needed.

  1. Preheat oven to 400°F (200°C).
  2. Place the chicken and broccoli in a baking pan or baking dish that is about 10 x 14" (25 x 35 cm).
  3. Add cream, cream cheese, sambal oelek, salt, and pepper to a bowl. Whisk until combined. Stir in the blue cheese. Pour the sauce on top of the broccoli and chicken mix until everything is covered with creamy deliciousness.
  4. Bake for 25 minutes or until the chicken is completely cooked.

Tip

Serve this hearty casserole as it is or together with some cauli rice or a fresh salad.

Sprinkle the casserole with a handful of roughly chopped walnuts before popping it into the oven for a nice extra crunch.

    This recipe was very tasty and easy to make. I put it all together early and then kept the casserole dish in the refrigerator until cooking time. The only thing I had to buy was the sambal oelek and it was at the grocery store for $1.79. It's great that several other recipes use this chili paste, so the jar will be used up eventually.

    Hi Michelle, yes, all of our recipes show net carbs per serving! So for this recipe, it would be 8g of net carbs per serving.

    Bit hard to find sambel olek in any part of England outside of London and possibly Manchester, miles away. Never heard of the stuff, neither had my big supermarket! Will have to find something else that isn't so obscure.

    You can also use any chili paste that you can find locally, as noted in the list of ingredients. Some people also like chili garlic sauce or chili garlic paste. Anything that will give a little kick of heat will work well in this recipe.

    Loved this. Detest blue cheese so used Feta instead and it worked very well. Really enjoyed the heat kick from the Sambal Oelek and the crunch of both the broccoli and added walnuts

    Hi. Two things. First - really important - the instruction to bake raw chicken for just 30 minutes is wrong to the point of being dangerous. At 30 minutes, the chicken pieces were clearly raw, and it was more like 90 minutes to get a safe cooking of the chicken. Or instruct people to fry the chicken first, as some other recipes here do.

    Second, I could not cook the disk and not get the creamy sauce to separate. Not sure how to fix this; whether the trick is in how to bake a cream sauce, or if it is something to do with the chicken.

    But the disk is REALLY great. Thank you !

    Hi, Marek! As all ovens can vary, the instructions state to "Bake for 25 minutes or until the chicken is completely cooked." This can certainly mean longer than 25 minutes for different types of ovens.

    Next time I will cook the chicken first. The chicken on the sides were cooked but all the chicken past the outside were still raw after 25 min. Not sure any oven would cook this raw chicken in 25 min. It took almost an hour for the chicken to cook, But it was delicious!

    This was my first attempt at cooking keto and loved it. Very easy to follow (im a bit hopeless in the kitchen!) and super tasty, would say it was a bit rich and i couldnt have to much but not a loss i had it for lunch the next day
