Fresh Italian flavors are combined with flaky white fish in this easy high protein meal. The pesto adds just the right amount of zing to complement the melted buffalo mozzarella. Try this for an easy weeknight dish.

Ingredients

  • 2 (14 oz.) 2 (400 g) white fish filletwhite fish fillets
  • salt and ground black pepper
  • 2 tbsp 2 tbsp green pesto
  • 5 oz. (1¼ cups) 140 g (300 ml) fresh mozzarella cheese, sliced
  • ½ (2 oz.) ½ (55 g) tomato, slicedtomatoes, sliced
  • 1 oz. (1½ cups) 28 g (325 ml) arugula lettuce or baby spinach
  • 1 tbsp 1 tbsp roasted pine nuts (optional)
  • 1 tbsp 1 tbsp fresh basil for garnish (optional)

Instructions

  1. Pre-heat the oven to 350°F (175°C).
  2. Place the fish fillets in the dish and season with salt and pepper.
  3. Spread pesto generously on top of each fillet, then place cheese and tomatoes on top in an alternating pattern. Season with some more salt and pepper. Bake in the oven for 15 to 20 minutes or until the fish is cooked all the way through.
  4. Serve the fish on a bed of arugula and pour the juices from the baking dish over the dish. Garnish with roasted pine nuts and fresh basil leaves if you're going for a more elegant presentation.

Tip

Use fresh buffalo mozzarella for the best taste!

If you purchase frozen fish fillets, make sure to defrost them first.

Not a fish fan? Swap for boneless chicken breasts or thighs and adjust the cooking time until the chicken reaches 165°F (74°C).

If pine nuts aren't for you but you like some crunch in your salads, swap them for roasted sunflower seeds.

    My fish is not even close to cooked through after 25 minutes. I'm using tilapia fillets, fairly thin. What am I doing wrong? I just kicked the temp up to 450 to get it done. Smells great, I'm HUNGRY!

    OK, I got the fish cooked through, but the overall result was a bit mushy and unappealing on the plate. Tasted ok. Maybe tilapia was a bad choice for white fish fillet? I might try this again with chicken.

    Tilapia is a mushy fish- not a favorite. But taking so long to cook? I wonder if you cooked them from frozen? The recipe is for fresh (or thawed) fish

    You may want to try another type of white fish or even trying the chicken is a good choice!

    I did this with tilapia and it turned out well. I did in my air fryer and the fish was done in 15 minutes. Very tasty and easy.

    Very tasty! I substituted chicken breasts. Having a meat thermometer was essential to know when the chicken was fully cooked.

    Does anyone have a substitute for pesto or can it be skipped entirely? We've had a lot of pesto in our lives and would just like to mix things up.

    You can skip it entirely. An olive tapenade or a sun dried tomato pesto might be nice instead! This pork tenderloin recipe has a great tapenade recipe.

    We absolutely loved this. What a fabulous mix of flavors! We used tilapia (thawed) and chopped cherry tomatoes (no good whole tomatoes around here except at farmers markets).

    Oh, maybe I am the only one that was disappointed. The combination of pesto, fish (cod), and cheese just threw my taste buds off. Even my husband felt that it was not appealing.
