Grilled chicken Caesar salad
Calling all Caesar salad lovers! Our grilled Caesar salad is a smoky spin on the classic recipe. Leafy wedges of romaine are seared on the barbecue to create a lightly charred flavor, then drizzled with creamy homemade Caesar dressing and Parmesan cheese.

Caesar dressing
- ½ cup 120 ml mayonnaise
- 2 tbsp 2 tbsp water
- 1 tbsp 1 tbsp lemon juice
- 1 1 garlic clove, mincedgarlic cloves, minced
- 2 2 anchovies (optional)
- ½ cup (11⁄3 oz.) 120 ml (40 g) shredded Parmesan cheese, save some for topping
- ½ tbsp ½ tbsp Dijon mustard
- salt and ground black pepper
Grilled chicken and lettuce
- 2 (2 oz.) 2 (55 g) Romaine lettuce
- 2 lbs 900 g boneless chicken thighs
- 2 tbsp 2 tbsp olive oil
- salt and ground black pepper

Making low carb simple
Instructions
- Heat up the grill or use a grill pan on the stovetop.
- Add all the ingredients for the dressing to a blender or a mixing bowl if using an immersion blender. Mix until smooth. Taste and adjust flavors to your liking. Set aside.
- Take the entire head of romaine and cut it into quarters lengthwise.
- Brush the chicken thighs and romaine lettuce with olive oil. Season with salt and pepper.
- Grill the chicken until it's no longer pink inside. If you have room for the lettuce on the grill or grill pan, add it halfway through. Otherwise, remove the chicken when done and keep warm while you grill the romaine lettuce until charred and slightly soft.
- Serve the grilled chicken and romaine salad with the dressing. Top with the remaining Parmesan cheese and freshly ground black pepper.
Tips!
If you are missing crunchy croutons, try pork rinds instead.
