Smoked ham stuffed zucchini boats
Ham, herbs, and cheese anchor a low-carb filling that carries zucchini from yum to YOWSA. Familiar, satisfying, and oh-so-delicious. If you like zucchini, we promise this dish will float your boat.

Ingredients
- 12⁄3 lbs 750 g zucchini
- 1 tsp 1 tsp salt
- 1 tbsp 1 tbsp olive oil
- 14 oz. 400 g smoked deli ham
- 4 oz. (½ cup) 110 g (120 ml) cottage cheese
- 2 tbsp 2 tbsp mayonnaise
- 2 tbsp 2 tbsp red onion, finely choppedred onions, finely chopped
- ½ tbsp ½ tbsp dried rosemary
- 1½ cups (6 oz.) 350 ml (170 g) cheddar cheese, shredded
- salt and pepper
For serving
- 7 oz. (5½ cups) 200 g (1.3 liters) lettuce
- 4 tbsp 4 tbsp olive oil
- ½ tbsp ½ tbsp white wine vinegar
- salt and pepper

Making low carb simple
Instructions
- Preheat oven to 400°F (200°C).
- Split each zucchini in half, lengthwise, and remove the seeds. Sprinkle with salt and let sit for 10 minutes.
- Blot off the drops of liquid with paper towels. Place the halves in a greased baking dish.
- Chop the ham coarsely and mix with cottage cheese, mayonnaise, red onion, and spices. Add a third of the grated cheese. Salt and pepper to taste.
- Distribute the mixture into the halves of zucchini and sprinkle the remaining cheese on top. Bake for approximately 20–30 minutes or until the zucchini boats have turned a nice golden color.
- Mix oil, vinegar, salt, and pepper into a simple vinaigrette. Serve the zucchini boats beside a simple salad made with lettuce and vinaigrette.
Tip
Feel free to vary the recipe by using this yummy filling in eggplant or bell peppers.
And if they are zucchini vegetable carbs, do they really count???
Zucchini, cottage cheese, cheese and onion all have carbs. The carbs we list are the net carbs which are digested and yes, should be counted.
The orange circle indicates this is a moderate low carb recipe, not in the keto recipe collection. However, many people eating keto can easily tolerate 7-10 grams of carbs per meal. This is in the moderate low carb collection because it's lower fat and higher protein (by percentage of calories) than our keto meals are.
We have not tested this with alternate ingredients but you may have luck with ricotta cheese.
