Ingredients

Meatloaf
  • 2 tbsp 2 tbsp butter
  • 1 (4 oz.) 1 (110 g) yellow onion, finely choppedyellow onions, finely chopped
  • 1½ lbs 650 g ground beef or ground turkey or ground pork
  • ½ cup 120 ml heavy whipping cream
  • 2 oz. (½ cup) 55 g (120 ml) cheddar cheese, shredded
  • 1 1 egg, beateneggs, beaten
  • 1 tbsp 1 tbsp dried oregano or dried basil
  • 1 tsp 1 tsp salt
  • ½ tsp ½ tsp ground black pepper
  • 7 oz. 200 g sliced bacon
Gravy
  • 1¼ cups 300 ml heavy whipping cream
  • ½ tbsp ½ tbsp tamari soy sauce (optional)

Instructions

Instructions are for 4 servings. Please modify as needed.

Meatloaf

  1. Preheat the oven to 400°F (200°C).
  2. Over medium heat, melt the butter in a frying pan. Add the onion and fry until soft, but not browned, and then set aside to cool.
  3. Mix the ground meat in a bowl. Add in the fried onion and all the other ingredients, except the bacon. Mix well, but avoid overworking it because this can make the end result too dense.
  4. Form into a loaf and place into a greased baking dish. Wrap the loaf in bacon.
  5. Bake in the middle of the oven for about 45 minutes. If the bacon begins to overcook before the meat is done, cover with aluminum foil and lower the heat a bit. If the bacon doesn’t appear to be completely done, broil the meatloaf for approximately 5 minutes.

Gravy and serving

  1. Save the juices that have accumulated in the baking dish, and use to make the gravy. Mix the juices and the cream in a smaller sauce pan.
  2. Bring to a boil and lower the heat and let simmer for 10–15 minutes until it has the right consistency. If you want, use a little tamari soy sauce to taste.
  3. Serve with freshly boiled broccoli or cauliflower with butter, salt and pepper or any other side dish of your choice.

    What type of pan? Glass temp Max is 350degrees. This is 425 degrees. Will a metal loaf pan crisp the bacon between the sides of the pan, or should it be loaf shaped, and put in a larger baking pan?

    This can be done in a metal pan. Just a note that the oven temp for this is 400, not 425. If you want the bacon to crisp on the sides, you can use a larger loaf pan or even a cookie baking sheet.

    I have read all these comments and I have to say...the DietTeam Doctor is a very patient individual. The directions are spot on. I just think reading the recipe twice before you prepare would help a lot here.

    This meatloaf was amazing! I used mostly ground pork, a little grass-fed ground beef. I used Applewood smoked bacon. I put a bit of Worchester sauce in the onions as I cooked them. I used extra 3 cheese blend. I used coconut aminos where it mentioned tamari soy sauce. I also added a cpl tablespoons of tomato paste, and a little bit of xanthum gum to the bacon gravy, and it was perfect. BEST MEATLOAF I HAVE EVER HAD!

    I am making this again. I will make the four servings last time I had it had a serving couple days after I made it. Will the gravy and recipe hold well for 4-5 days? Also I am couple ounces short on meat for the 25 Oz would it be ok to omit? I am making this and the blue cheese casserole and don’t want to buy another pound of meat for two ounces :)

    I halved this recipe, the edges of the loaf were still pink when pulled out and the bacon didn't crisp up- Bacon might have been too think/fatty but the whole thing was VERY greasy.

    Dear Diet Doctor Recipe People! This meatloaf is really delicious! I did not make or serve the gravy. My question is about the nutrition facts.

    After I dished out the finished bacon-wrapped meatloaf, I poured off 253g (over a cupful!) of combined beef-and-bacon fat from the baking dish. I did not use that fat to make "gravy." At 9 calories per gram, that adds up to 2,277 calories that are NOT in the finished product. Divided by four servings, that's 569.25 calories of "discarded fat" per serving.

    When I fed all the ingredients that I used into the CookBook at FatSecret, it came to 736 calories per serving. (Note that I excluded the 1.25c of heavy whipping cream for the gravy.) 736 minus 569 is only 167 calories per serving. I know that can't be correct.

    How is the calorie count figured for this recipe?

    I was nervous to try this out, since meatloaf is my husband's favorite meal. He's a fan of the ketchup and brown sugar-topped variety, just like my granny used to make. Even so, I followed the recipe exactly and to everyone's surprise (including the kids) we all LOVED it!

    I split up the finished meatloaf into 6 portions. I had only 20 oz of grass fed beef on hand, but that was the only difference. My calculations came to only 6.35g net Carbs for 1/6 of the meatloaf. And don't skip the gravy! You will regret it if you do!

    I made steamed broccoli as a side, and the gravy was delicious on top of it as well. Thanks for another great one, Diet Doctor!!!

    The nutrition information is for the whole recipe. I do not know what the meatloaf alone would be.

    I would start with about 4oz of feta and 1-2 tsp of the spices; add them to the meat.

    As I added the cream to the draine off fat I was thinking “noooooo”

    As I was eating the finished product I was thinking when can we have this again

    I don't write reviews normally, but I j use had to for this one. Man-oh-man this is so good. After I'd put it all together and was putting it in the oven last night, all I could think was that this was the most decadent thing I'd ever done with ground beef. All of my WW-indoctrinated brain cells were screaming "stop right there girlie!" but I don't listen to those messages anymore. This recipe is beyond delicious. Just had leftovers for lunch and I'm just giddy. Make this one as soon as you can. Don't skip the gravy.

    Different people prefer less onion taste or more onion taste, so we left that flexible. If you don't like onions as much and want to keep the carb count lower, you can go with a smaller onion.

    Made the recipe with 3/4 ground beef, 1/4 ground pork and then followed the recipe to the T (gravy and all) and it was just perfect! We loved it. My 11 years old son had two servings, which is quite unusual for him! I will definitively cook this recipe for my parents and in-laws when I go back to France for Christmas. It is a winner!

    I frequently make a large meatloaf in a 9 x 13 x 2" Anchor Hocking glass casserole dish, which is made for the oven. I even turn the broiler on for a few minutes at the end to brown the bacon (keep an eye on it though). I think they build a safety margin into the 450 degree max.

    I love this meatloaf! I assembled all ingredients and suddenly realized that I had used my heavy cream for my keto cheesecake. What to do?? Oh! I have some fullfat sour cream! Hmm? I wonder? Why not? I added 1/2 cup to my meatloaf. WOW! The flavour is amazing. I also used TexMex shredded cheese with jalapenos! Zinger.So the sour cream made my meatloaf come alive. Who says you can't reinvent the wheel? Delish😁

    It seemed like an odd recipe, but the result was delicious. I used 1 tbsp of flaxseed mixed with 3 tbsp of water to replace the egg (due to an egg allergy) and it came out great. Make the gravy - it sounds like an abomination but it's very yummy.

    Delicious. I baked the meatloaf on a rack over a roasting pan so the bacon got browned all over - love bacon, but only when crispy! - and it was very very good. We went mexican, with chopped pickled jalapenos, grated cheddar cheese and keto taco seasoning mixed in with the meat. We used a mix of beef and pork mince and put sour cream instead of heavy cream in it because that's what we had. Left out the onion - we always do, to reduce carbs, and we've found that you don't really notice its absence, especially in a highly seasoned dish like this. We didn't make the gravy. Leftovers are excellent too!

    This is AMAZING!!!! Everyone loved it. Very easy to make. Only thing I would change personally is not to add the salt. The bacon (and depending on what cheese you use) give it sufficient salt so adding the salt into the meatloaf wasnt required. Fantastic meal! Very filling.

    this went over extremely well here. I'm the only one on keto in a house of 5 and the menfolk dive bombed this meatloaf. I actually put a slice back for next day before they got any of it. Boy was that a good move. there was nothing left at the end of the meal!

    While we haven't tested this recipe with almond milk, it should work well. You may want to try using a little less as it's not as thick as heavy cream.

    Bindi, meatloaf freezes well if you want to do a quadruple batch next time and stash some in the freezer :)
