Ingredients

Chicken drumsticks and marinade
  • 2 lbs 900 g chicken drumstickchicken drumsticks
  • 2 tbsp 2 tbsp olive oil or coconut oil
  • 2 tbsp 2 tbsp white wine vinegar
  • 1 tbsp 1 tbsp tomato paste
  • 1 tsp 1 tsp salt
  • 1 tsp 1 tsp paprika powder
  • 1 tbsp 1 tbsp tabasco
Chili aioli
Serving
  • 2 cups (4 oz.) 475 ml (110 g) leafy greens

Instructions

Instructions are for 4 servings. Please modify as needed.

Chicken drumsticks and marinade

  1. Preheat the oven to 365ยฐF (185ยฐC). Line a baking sheet with parchment paper.
  2. Put the drumsticks in a plastic bag or a medium-sized bowl.
  3. Mix the marinade ingredients together in a small bowl. Pour it over the drumsticks to coat completely and marinate for 10 minutes at room temperature.
  4. Place the drumsticks on the baking sheet and bake for 30-40 minutes, or until golden and crispy.

    5. Chili aioli

  5. In a small bowl, mix together the mayonnaise, minced garlic, and chili powder until well combined.
  6. Serve the drumsticks with the chili aioli on the side.

    This is something we'd definitely like to try.

    But why do we need to use (and presumably discard) a PLASTIC BAG?

    Can't we just toss the chicken pieces with the seasonings in an ordinary reusable glass bowl and let them sit for the short marinating time, perhaps covered?

    It's a suggestion, not a necessity. Some prefer to use reuseable stuff while others prefer less clean up......to each his own.
    For the record I have tried both methods and honestly prefer the plastic bag method better because the seasoning spreads all over the meat easier and more evenly.

    I think some people may have a slight issue with touching raw chicken and cleaning the surfaces that came into contact with raw chicken (salmonella phobia?) I personally don't, and do the same as you (glass bowl, utensils for stirring and picking up chicken pieces.) I also limit contact of food with plastics, Teflon, and other surfaces that may have diluents that can find its way into food.

    Some people prefer quick tips (like the plastic bag idea). I don't mind seeing instructions either way. If you have another way...great...then do it. Do as you please.

    What does everyone do with the chili aioli......dip the wings or coat them after they get out of the oven????

    amazing recipe! i used wings for this and they came out beautiful and crisp, i used the chili aioli as a dipping sauce instead of slathering them on the wings after being cooked, but i might try that next time :) will definitely be making these again in the future.

    Serving size is confusing. Based on your 2lbs of drum sticks and 4 servings that would be 18 oz of chicken. The micros donโ€™t add up.
    I am assuming this is a raw weight but still it seems high.
    Any thoughts
    The recipe is amazing, and so easy my 9 and 11 yr old boys made it with my supervision.

    Just looking for the right serving size to manage the protein intake.

    These are delicious! My non-keto husband loved them too. I made the dipping sauce using store bought Garlic Veganaise & just added paprika. A keeper.

    There are no specific storage requirements for these. They can be stored in the refrigerator.

    We have not tested that for this recipe, but it should work OK.

    Serving size is going to depend on how many chicken wings you get in your specific amount of meat. Smaller wings = more wings per serving than if they were large. This is why we give the number of servings as it is the most accurate.

    These were excellent! Cooked them on the charcoal grill with Applewood smoke for an hour. Delicious!

    These were wonderfu....not overtly salty and not drenched in too much sauce after baking as many restaurant wings tend to be. Thank you! I paired these wings with some collard greens cooked in bacon and onion. I served the wings and the collards up with some peeled celery sticks, and the aioli was a really great pairing with them. I will put these in regular rotation at our house!

    I've always included the oil in the marinade.

    Mine didn't get crispy
    I think the oven should be hotter , 380 or more
