Ingredients

  • 5 oz. 140 g bacon, diced
  • 2 lbs 900 g chicken breastchicken breasts
  • 2 tbsp 2 tbsp butter
  • 3 3 garlic clove, mincedgarlic cloves, minced
  • 7 oz. (6½ cups) 200 g (1.6 liters) baby spinach
  • 1 cup 240 ml heavy whipping cream
  • 1 cup (2¾ oz.) 240 ml (80 g) shredded Parmesan cheese
  • salt and pepper
  • 1¼ lbs 550 g cauliflower

Instructions

  1. Fry the bacon until crispy and cooked through. Drain, and set aside in a bowl or on a plate.
  2. Cut the chicken into strips. Add butter in the same frying pan with the remaining bacon fat and sauté the chicken and garlic. Set aside when the chicken is thoroughly cooked.
  3. Sauté the spinach until it shrinks, but no more. Set aside.
  4. Add cream to the pan and let boil for a few minutes. Add parmesan cheese, bacon, chicken, and spinach. Salt and pepper to taste.
  5. Lower the heat and let simmer while parboiling the cauliflower.
  6. Divide the cauliflower into small florets, no bigger than walnuts. You can use either fresh or frozen.
  7. Parboil the cauliflower in lightly salted water for a few minutes. Let drain thoroughly. Add the chicken and sauce. Stir and serve.

Tip!

Orange or purple cauliflower would be gorgeous in this recipe! For a change, try spiralized zucchini instead of cauliflower. No need to parboil, just add the uncooked zucchini zoodles to the pan with the chicken and Alfredo sauce, stirring until the zoodles are warmed through but not too soft. Serve. For a nice garnish, save some of the bacon to crumble on top of each serving with some chopped parsley.

    I just made this and it's great! I did the four servings. It definitely needed salt, and I can imagine that experimenting with a white wine in the sauce would be good, but I didn't try that this time. Instead of sour cream, I used 1 cup creme fraiche with one cup heavy cream, and added 5oz of Parmesan (instead of 3oz) and the consistency turned out pretty good (not too soupy). I think this dish works better with the chicken cut up into little pieces. :)

    I made this for a family supper, doubled the recipe, and we loved it! I used uncured turkey bacon, fresh cauliflower, and both whipping cream and sour cream. I also sprinkled pine nuts on top. Yes, the chicken is cut into chunks before sauteeing. Delicious! I think sauteed mushrooms would be a great addition.

    Absolutely delicious! My non-keto family loved it just as much as me. I had made the garlic butter roasted chicken a couple of days ago (which was also scrumptious!) and used the leftover chicken for this dish. I just cut up the cooked chicken and cooked it for a few minutes in the bacon drippings with garlic to infuse flavour. This made it a super-quick weekday meal!

    This was delicious but I think some of the instructions were vague. Such as 20 oz of chicken breast. Cut up? Strips or cubes? I did strips. It came out fine. Thumbs up from my husband too. It'll be in our regular rotation.

    If you are on this main recipe page, adjust for the total actual numbers of servings that you want. If you are looking at this from inside your 2 week challenge list, then remember that it will make double the servings. I have a family of 4 at dinner, but only me for lunch so for my weekly challenge amounts, I set the number of people to 3. That gives me 6 servings!

    We don't eat pork in my house anymore, so bacon isn't ever on the menu. I've discovered, however, that summer sausage (you know, those beef logs that people give out at the holidays) is a FANTASTIC substitute for cured pork products like bacon, pepperoni and pancetta. Dice it, slice it or shave it - then pan fry to get the caramel-flavored crust on the edges. It's delicious and I don't even miss pepperoni pizza!

    Kristen, this response has me confused.
    If you have four eating on meal plus one extra for lunch the following day why not select 5 servings or are you saying one serving is actually 2 servings on the 2 week challenge?

    The drop down box says servings next to it, and you select the number of servings for the correct recipe amounts?? This recipe is linked from my email for day one of challenge....

    For the meal plan, if I selected 5 PEOPLE, that would give me 10 SERVINGS. I only need 5-6 SERVINGS so I set my meal plan for 3 PEOPLE. It took me a little bit to catch that difference in terminology as well. For the recipe, you know how many total servings you need (and that should be what your shopping list indicated) so you can adjust the number of servings as needed.

    I’m a little confused on servings. On the recipe I printed out from the 2 week challenge it says 1+1 servings. On the recipe itself it says for 4. The ingredient amounts change when I change the amount of servings. I split this up into 4 servings weighing about 7 oz each. Can anyone help me??

    Our recipes are all available to everyone, not just for people on the two week challenge. If you cook from the Recipes tab, where it specifies 1 + 1 servings, then you'll get 2 total servings. If you click through to the actual original recipe page, it will look the same for you as it does for someone who goes directly to the recipe apart of the 2 week challenge.
