Ingredients

  • 3 oz. (6 tbsp) 85 g (90 ml) unsalted butter
  • ยฝ cup (1ยฝ oz.) 120 ml (45 g) unsweetened finely shredded coconut
  • 1 tsp 1 tsp ground cardamom (green)
  • 1 tsp 1 tsp ground cinnamon
  • ยฝ tsp ยฝ tsp vanilla extract

Instructions

Instructions are for 10 servings. Please modify as needed.

  1. Bring the butter to room temperature.
  2. Carefully toast the shredded coconut in a dry pan over medium high heat, until lightly browned. This will enhance the coconut flavor, but you can skip this if you want. Let cool.
  3. Combine butter, half of the shredded coconut, and spices in a bowl. Chill mixture in refrigerator for 5-10 minutes, until slightly firm.
  4. Form into walnut sized (roughly 1" or 2.5 cm) balls. Then roll the balls in the remaining shredded coconut.
  5. Store in refrigerator or freezer.

    I just made these and they are delicious. Personally, I don't like cardamom but I love cinnamon and vanilla. So I put loads of cinnamon and fresh vanilla into the butter and I also used roasted coconut flakes. Really tasty and I'll definitely do these again. :-)

    Yucky butter mess. I had to add significantly more cinnamon, cardamon, vanilla to even get a little flavour. Need at least double the coconut to go with that amount of butter. Finally had to add a few drops of real maple syrup to make this palatable.

    it would make the texture better and i think you could actually make smaller snack siballs because they would hold better.

    what about listing some variations?

    - rolled in nuts
    - companies do cooking grade aromatherapy oils such as peppermint, lemon, lime, aniseed, orange, rose etc

    You guys the fat bombs appear to all be made out of butter, are we supposed to eat these or put them into something??? Im kinda confused cuz eating butter and coconut does not sound appealing at all. THanks in advance for the advice!!

    Hi... read the above comments. I used 2x coconut, and spices. Putting mixture in fridge for about 15 minutes , and spraying coconut oil in my hands seem to help make the rolling-dipping process less gooey! I also used a melon baller. Hope these comments help!

    Put mine in the freezer for a fast chill before forming balls, thanks to the input here. Helped some, but I ended up using it as a topping on other recipes.

    I liked the flavor but they didn't form into shapes even though I added coconut.. Ended up putting everything in a jar and into the fridge to eat with a teaspoon

    I did not think much of these, not a lot of flavour. I did however neglect the vanilla as I had none, so this may have been the problem. I will try again with vanilla and add double the spice. I think ginger may be the go, so may try that as well. Was unable to roll into balls, so placed in silicon mini muffin trays and this was easy.

    Ugh, awful. So much worse than eating a blob of plain butter. I followed the recipe exactly and couldn't believe how gross these bombs are. Was sure I'd need to eat a proper cardamom pastry to cleanse my palate after this atrocity. I will not be using recipes from the "cook" again!

    Mary got it perfect!!! I did half butter half cream cheese , doubled the spices sbd doubled the toasted coconut flakes. Added a single packet of Truvia for a bit of sweetness and ....perfection. Thanks again for the modifications, Mary!!

    AWFUL!!! Was there something missing from this recipe like eggs?
    I doubled the coconut and ended up with something that tasted like a stick of butter rolled in coconut.
    This recipe is a complete waste of time and a stick of butter!!
    It was also my first Diet Doctor recipe, so verrrrrrry disappointed.
    I hope the other recipes are better than this!!

    Way too much butter - just a sloppy greasy mess. Even after adding another CUP of coconut it still wouldn't form a ball.

    I agree!! Same thing happened with me - terrible recipe.

    Very disappointing. Needed WAY more coconut. Also larger flaked coconut does not work. No flavor. Tasted like eating crunchy butter. Could not form into balls.

    This base recipe is extremely bland and there's not nearly enough coconut. I added a lot more coconut and then sprinkled the final product again with cardamom and cinnamon to give them some additional flavor. They could use more vanilla as well. Next time I'll also use salted butter.

    I made them, but a little different. I used almond extract and added a tablespoon of Swerve. Man, they were good! Better than an Almond Joy!

    Look around thereโ€™s another one way better itโ€™s coconut oil instead of butter! Gotta make sure to refrigerate or freeze then itโ€™s fantastic! Just need to search! I agree butter one sounds unpleasant I wonโ€™t be making it!

    These are great! I was looking for a fat bomb without sweeteners, and this worked perfectly. It satiates the hunger without triggering sweet cravings. I stirred in half the coconut while it was still warm to help it incorporate into the butter. Then I chilled the mixture while the rest of the coconut cooled to make it easier to roll into balls. I'll make a double batch for the freezer next time I make these.

    Done these today, added a little more cinnamon and Vanilla and little more coconut and they taste lovely.

    I was expecting a Butter taste as most of the comments stipulated it was eating a stick of butter lol but they do not taste like butter.

    You dont get many out of mixture I got 5 decent sized ones which would be enough for me tbh but I'd assume you double up ingredients if you want more out of mixture.

    All in all I like them ๐Ÿ‘๐Ÿ‘Œ

    I'm so confused by this recipe. I followed it exact and there is no way I'm getting 10 "walnut" sized balls out of it. Maybe 1.5. Hmmmm.

    I like the flavors in this, but not the butter so much. I think it's too much butter flavor for me. The next time I make it, I will sub part coconut oil and/cocoa butter... Something like that. And for sure you can't use salted butter in this! Haha! It was yuck when I just used the salted that I had. But I love that there's no sugar, no chocolate for a change (I do love choco just not all the time), and no nuts/nutbutter (also get super bored of nuts!). So I really like the change of pace here! I will just tweak it for myself ;)

    Pure delish. I roasted the coconut and I used salted butter but I also added monk fruit sugar inside and outside with the coconut coating. Heaven.
