Ingredients

  • 2 cups 475 ml heavy whipping cream
  • 3 oz. (23 cup) 85 g (160 ml) fresh raspberries or fresh strawberries or fresh blueberries
  • 2 oz. 55 g chopped pecans
  • ½ ½ lemon, the zestlemons, the zest
  • ¼ tsp ¼ tsp vanilla extract
This recipe has been added to the shopping list.

Instructions

  1. Pour the cream into a bowl and whip with a hand mixer until soft peaks form. Add the lemon zest and vanilla towards the end.
  2. Add berries and nuts to the whipped cream and stir thoroughly.
  3. Cover with plastic wrap and let sit in the refrigerator for three or more hours for a firm mousse. You can also enjoy the dessert immediately if you don't mind a less firm consistency.

Tip

We like a blend of raspberries and blueberries. What do you like? Try any combination — strawberries, cherries, blackberries, or red and black currants.

    I'm a bit confused by the carbs in this recipe and hope someone can help. Where do the carbs come from? I know there is guidance that says you should only use small amounts of berries if you are trying to be strict, which I am, but the nutritional info on the berries I have seem to contradict that. It lists, per 100g, 6.5g of carbs and 7.3g of fibre. To me that means it is zero carbs - in fact I have gone into minus! The cream I have used comes out at about 1g of carbs so am I right in thinking that without the nuts this will be 1g carbs per serving? Really wish there was a list of food with carbs per100g/100ml to check against. I would then feel more comfortable adding additional things to a recipe or putting new ones together myself. Thanks

    Hi Lisa
    The carbs quoted are total carbs which your body will use, with fibre added on top. You don't subtract fibre from total carbs (unlike US guidelines).
    If you look elsewhere on the site, there are really good guides to carb amounts in fruit, veg, nuts - the "eat this not that" guides. Berries, pecans and double (heavy) cream are all really low in carbs.

    Just to clarify. :)

    In our recipes we use "Net carbs". :)

    Net carbs = Total Carbs - Fiber

    Good morning
    I started the diet about 6 weeks ago .I enjoy it but my weight goes up & down some times its past my 10 pounds another week its down 2 to 3 pounds .I do exercise most days I run & walk the pool for an hour .Is this weight going back & forth normal or should I be doing something different ?

    I hope you are taking measurements of your waist as well...and not only your weight. It is possible to lose fat and put on muscle. Do you notice your clothes fitting you differently? It has happened to me where I go through months of almost no weight loss, but my body looking better and leaner...and clothes feeling very loose on me. Also, make sure you stay hydrated and drink some broth on a daily basis, to restore electrolytes and prevent dehydration.

    I made a variation of this for Thanksgiving. I apologize in advance for not doing the calculations on this. I used 2 cups of HWC, 8 oz cream cheese, 3 oz chopped pecans, the zest, and about 6 oz of fresh cranberries, finely chopped. I sprinkled the cranberries with granulated stevia to sweeten them a bit and put them in the fridge for a few hours. I beat the HWC (with stevia) until stiff peaks formed, beat the cream cheese and zest (also with stevia) until smooth, then folded the two together. I stirred in the pecans and cranberries and let it set in the fridge overnight. Took this to my parents' house to share with the family on Thanksgiving. They loved it!. Just to be sure we had some low carb options, I also took a cauliflower "stuffing," deviled eggs, and an eggplant ricotta bake. The family carried on about how rich, delicious, and filling my food was. Keep the recipes coming! I love this site!

    These meals are simple to make. Even my boyfriend who can't cook can make these. And if you don't like and want to cook, just eat a lot of ready to eat vegetables and fish or meat. Some nuts every now and then, an egg, some fried bacon (because that's not really cooking), fried eggs, all really simple. And if you still don't like it, get a grip then.

    I was placed on pre-diabetic status by my doctor in January, 2017 based on my A1C lab result of 6, I started on this low Carb . Diet and just 2 months (3/22/17) when I re-tested again my A1C is at 5.6 ( normal) . This diet works . Thanks guys

    I don't know how this could be called mousse, it's just flavored whipped cream. It was too rich for me, after a few bites it made me feel ill. I can't imagine serving it to non low carb guests, except maybe as a dollop on top of cake or something. You know, as whipped cream is normally used.

    I have been with Low Card for 1 year and have lost weight at a stand still right now, but now my cholesterol has gone up quit a bit. What can I do for that.???

    I fail to see how you would be losing weight with eating such rich food in abundance. Sure, you've cut down carbs massively but on the other hand you have added massive amounts of fat some of which is cholesterol ridden. This doesn't sound like a good diet and goes agains my sensibility. No offence meant, just convince me.

    Youtube No Sugar, No Starch, Dr. Eric Westman, Duke University. Other videos with him grocery shopping for and what not to eat. Join a support group on Facebook. Ask questions. Diabetes is being reversed. Medications are being reduced or eliminated because they are treating food effects. Remove the bad food and you need less medicine. Weight is being removed because the body is retrained to burn fat. Be skeptical and intelligent, and research. Then share with others to help them succeed.

    I agree - is there a list of food items anywhere that we can refer to? Would make it much easier to manage ingredients in recipes.

    I was really looking for something sweet and this looked to me like it could be what I needed. The recipe was so simple, how could I possibly go wrong? Tested it on my mother......nope, "what is this?" Then I tasted it. Nope. It's not sweet at all. I agree with KarrieAnn, it's tasteless. So far, I've tried the peanut butter balls, and the lemon ball (maybe the wrong names). I haven't liked any of them. The Keto bread was not bad, but not great. I will keep trying to find something that really thrills me, but I may have to stick with just plain food.

    This is pretty bland - but if you are used to eat so much sugar, of course this will seem bland. I added a TBSP of lemon juice and it's really good that way. Love the texture and the pecans!

    I have been gluten free because of an allergy for years and decided to take it to the next level- Keto. At first everything tasted gross and I wanted to cry. Now my taste buds have changed. Keto is actually more tasty than just gluten free. Give it time for your body to adapt.

    Try adding cream cheese for an actual mousse. Whipping cream doesn’t turn into mousse. I also add about a tablespoon of sweetener to give it a little more sweetness.

    If you leave them out, it won't be crunchy anymore. You can use any nut that suits your taste preferences.

    Use FROZEN berries, mix well with an immersion hand blender. It makes the cream cold and thickens it to the consistency of soft scoop ice-cream. Add a few drops of flavoured stevia, then to me it tastes better than any shop brought ice-cream!

    You would want to use coconut cream because of the higher fat content. Compare brands as carb count and ingredients can vary.

    Since this makes 8 servings and calls for 2 cups of heavy cream, each serving will be a little over 1/4 cup, depending on the volume of the other ingredients you used.

    No, this isn't a sweet treat. And I'm surprisingly ok with that. My need for sweet has greatly diminished since I started eating low carb. I love the simplicity of this dish. I whip in some cream cheese to give it a bit more texture. And use lemon juice instead of zest. And absolutely love it as a side with roasted meat. Especially a juicy herb roasted chicken. Mmmm. Think I'm going to make both right now.

    We started keto 2 weeks ago. I'm down 10 pounds and husband is down a little more than that. We decided to forego artificial sweeteners for the most part (we don't own any, but would consider a bite of the "diabetic friendly" ice cream in a social situation). I love recipes for sweets with no sugar as someone who would have eaten an entire box of Oreos in one sitting without breaking a sweat 3 weeks ago. I made a version of this for a party and got requests from non-keto people for the recipe!! I didn't have pecans so I used unsweetened coconut flakes and added a bit more vanilla. I plan to keep this on hand now! I made the whipped cream with coco powder and vanilla last night and put it on espresso for my breakfast this morning. I'm also excited to try it with lime juice, chia seeds, almond extract, flavored vodkas (for a party:), other berries, coffee, cinnamon and other spices, and even nut butters (and various combinations of those). If anyone has tried other combinations, please share! Please also,keep making these sweetener-free recipes!

    Just made this and OMG it is sooo good! I made 3 servings. I don't miss the sugar, however that may be because I added 1/2 tablespoon of Swerve OOPS, Lol! .... added 1/2 teaspoon of orange zest, no orange; had no lemon. I also blended my strawberries a bit to de-chunk them since they were frozen. Still tastes absolutely delicious! Will definitely be making this again... and again. Hope I didn't throw anything off by adding the sugar substitute and the orange zest.
    Can anybody let me know what you think about that? The macros and all. I'd greatly appreciate any comments and/or feedback.
