Instructions

  1. Place the eggs in cold water in a pan, just enough water to cover the eggs. Bring to a boil without a lid.
  2. Let the eggs simmer for about eight minutes. Cool quickly in ice-cold water.
  3. Remove the egg shells. Cut off both ends and split the egg in half. Scoop out the egg yolk and place in a small bowl.
  4. Place the egg whites on a plate and let sit in the refrigerator.
  5. Mix curry paste, mayonnaise and egg yolks into a smooth batter. Salt to taste.
  6. Bring out the egg whites from the refrigerator and apply the batter.
  7. Sprinkle the seeds on top and serve.

Tip!

We've used curry paste, but you can use any chili paste with or without curry flavor, or try chipotle paste.

    Turmeric powder added to deviled eggs improves the taste, in my opinion. It does not give them a hot taste. Some like "hot" and some don't.

    Where can you get curry paste? I've never been able to find it.

    If you live in a larger metropolitan area, you may be able to find smaller grocery stores that specialize in Indian foods. However, you may also be able to find curry paste in regular grocery stores too, in the ethnic foods section(s). You can also actually make your own curry powder, which is just a mixture of different spices, such as turmeric, cardamon, coriander, cumin, cinnamon, clove, etc.

    The serving size is only one egg, which is unrealistic.

    They're appetizers. And only ONE net carb per egg. But feel free to eat a dozen of them in one sitting if you absolutely must - just be sure to crack a window for your family.

    I love red curry but sadly no one else in my house ill touch it so I went with this for a curry fix! While these were to strong for me as is I added 2 Tablespoons of canned coconut milk to the yolk mixture and topped them with everything bagel seasoning to make the a little more mild. This only added a half carb per serving
