Ingredients

Omelet
  • 2 2 large egglarge eggs
  • 2 tbsp 2 tbsp heavy whipping cream
  • salt and ground black pepper
  • ½ tbsp ½ tbsp butter or coconut oil (optional)
  • 3 oz. (¾ cup) 85 g (180 ml) shredded cheese
Filling
  • 2 2 mushrooms, sliced
  • 2 (1¼ oz.) 2 (35 g) cherry tomatoes, sliced
  • ½ cup (½ oz.) 120 ml (15 g) baby spinach
  • 2 tbsp 2 tbsp cream cheese (optional)
  • 1 oz. 28 g deli turkey
  • 1 tsp 1 tsp dried oregano

Instructions

  1. Whisk together eggs and cream in a bowl. Season with salt and pepper.
  2. Heat the butter over medium heat in a non-stick frying pan. Spread out the cheese in an even layer so it covers the entire base of the pan. Fry over medium heat until bubbly.
  3. Carefully pour the egg mixture over the cheese and lower the heat. Cook for a few minutes without stirring.
  4. Fill one half of the omelet with mushrooms, tomatoes, baby spinach, cream cheese, turkey and oregano. Fry for a few minutes more.
  5. When the egg mixture starts to set (it can still be quite loose on top, but not too loose), fold the empty half over the side with toppings to form a crescent. Fry for a few more minutes and enjoy!

Tip!

There are an infinite number of ways to vary the filling. Here are a few suggestions: mozzarella and pesto; taco mince and avocado; smoked salmon, cream cheese, and baby spinach; tuna, mayonnaise, and scallions.

    Love the Crust! The Fried Cheese gives this omelette extra crunch and great flavor - I used Garden Vegetable Cream Cheese and didn't use the Oregano - Very Good! Definitely making this again!! :)

    So so good. It's about to be grocery day so all I had were the spices and some spinach/arugula to use for the filling, but even just like this it's my new favorite breakfast.
    The cheese crust reminds me of saganaki- add a squeeze of lemon juice and a tiny sprinkle of salt on top at the end for an even more amazing flavor boost.

    Just made this, with some modifications for what I had on hand. So glad I had a bit of cream cheese on hand, loved that! I had a variety of hard cheeses, mushrooms, red and yellow peppers already sliced from another meal, and ham. Awesome, loved the crispy slightly salty crust on the omelet!

    This recipe did not work for me. Perhaps it was because I used mozzarella for the cheese. Anyway, by the time the eggs began to set, the cheese had adhered to the bottom of the pan. It turned into delicious scrambled eggs with the filling mixed in. The cheese on the bottom was difficult to remove. I had to soak it for a while before it would let loose.

    Ok, I tried this again using Cheddar Cheese, in my cast iron skillet, with more olive oil than I used before, and this time, although difficult to get started, it cam out perfect! I loved the cheesy crust.

    Oh, my God! This omelet just turned awesome, delicious, savory and it was rather easy to prepare.

    After watching the video, I followed literally all the instructions and weighted the ingredients so they would be precisely what the recipe called for. The final product turned out so good: an absolutely perfect blend of flavors!

    My husband, who happens to love omelets but is an extremely picky eater, loved it as well.

    Will definitely prepare it again!

    Excellent! The only thing I would do differently next time is use half the butter as you really don’t need much because of the fat in the cheese. The cheddar I used made its own in the skillet.

    Done tons of omelette before but this recipe is great ! I substituted green beens for spinach and didn't have cherry tomatoes I had dry bolet wild mushrooms I forgot the oregano but this was delicious .

    I just made the pesto/mozarella stuffed version of this, and OMG, it was delicious!! I usually prefer scrambled over omelet, but the crunchy crust just changed that. It was delicious, and the pesto made it so nice and savory/salty, and so very filling. This will be in the rotation of regular recipes, for sure!

    Soooo good. I never would have thought to put the cheese on the outside of an omelette. Great idea! Followd the recipe to a T, but doubled it for my husband and I to share. I ended up putting all the veggies on top and broiling it because it was too big to fold over. It was delicious. But very filling. Will be having the other half tomorrow for breakfast.

    I used the wrong skillet and we ended up with scrambled eggs with crunchy bits of cheese through it and it's delicious! Can't wait to make it again and in the right skillet. How delicious!

    Have made this three times now and it is so delicious, satisfying, and lovely to look at! Pretty much followed the directions but have used extra virgin olive oil once when out of butter and that was very good; also used some bacon fat which was good. I would never have put these ingredients together, but they work very nicely! Of course the cheese crust puts it over the top. Be sure to watch the video as it really helps in knowing how long to let the cheese cook and also how to carefully pour in the eggs. This will fill you up! We had it today with cucumber spears and farm fresh raw milk and we were totally satiated! Thanks so much for another great recipe! (have tried three omelet recipes and they were all good, but this one really stands out!)

    I agree Phara. There's no way 2 cherry tomatoes, 12.5 grams of spinach and 2 tablespoons of cream add up to 8 grams of carbs!

    This is an excellent example of how quickly carbs add up including the mushrooms, tomatoes, spinach, cream, cheese, cream cheese and even the oregango.

    I made this twice. The first time I did not catch that you put the cheese down first, and so I prepared a basic omelet. I thought, nothing special. But then I tried it again today and actually read the steps (duh) and when I did it with the cheese first, then the egg, it made all the difference in the world. It was truly delicious. But I was amazed that 2 eggs would make this size omelet and I was only able to eat about 2/3. I am saving the other portion for a snack or a quick lunch addition for another day. Yum!
