Ingredients

Cloud bread
  • 3 3 eggeggs
  • 4 oz. (ยฝ cup) 110 g (110 ml) cream cheese
  • 1 pinch 1 pinch salt
  • ยฝ tbsp ยฝ tbsp ground psyllium husk powder
  • ยฝ tsp ยฝ tsp baking powder
  • ยผ tsp ยผ tsp cream of tartar (optional)
Filling
  • 2 tbsp 2 tbsp mayonnaise or vegan mayonnaise
  • 5 oz. 140 g bacon
  • 2 oz. (1ยฝ cups) 55 g (350 ml) lettuce
  • 1 (4 oz.) 1 (110 g) tomato, thinly slicedtomatoes, thinly sliced

Instructions

Cloud bread

  1. Preheat oven to 300ยฐF (150ยฐC).
  2. Separate the eggs, with egg whites in one bowl and egg yolks in another. Note, egg whites whip better in a metal or ceramic bowl as opposed to plastic.
  3. Whip egg whites together with salt (and cream of tartar, if you are using any) until very stiff, preferably using a hand held electric mixer. You should be able to turn the bowl over without the egg whites moving.
  4. In the bowl with the egg yokes, add the cream cheese, psyllium husk, and baking powder and mix well.
  5. Gently fold the egg whites into the egg yolk mixture โ€” try to keep the air in the egg whites.
  6. Place two dollops of the mixture per serving on a paper-lined baking tray. Spread out the circles with a spatula to about ยฝ inch (1 cm) thick pieces.
  7. Bake in the middle of the oven for about 25 minutes, until they turn golden.

Building the BLT

  1. Fry the bacon in a skillet on medium high heat until crispy.
  2. Place the cloud bread pieces top-side down.
  3. Spread mayonnaise on each bread.
  4. Place lettuce, tomato and fried bacon in layers between the bread halves.

Tomato tip

Some of the best slicing heirloom tomatoes are Beefsteak, Brandywine, Mortgage Lifter, Cherokee Purple, and Black Krim. Watch for these at your local farmers' market for a BLT upgrade!

How to store cloud bread

The bread keeps in the fridge for 2-3 days or in the freezer for up to 3 months. Put a layer of parchment paper between each bread so they don't stick together. That way you can easily grab as many as you need.

You can thaw frozen cloud bread at room temperature or in the fridge. They taste their very best if you toast them once thawed but you can also reheat them in the oven. Preheat to 300ยฐF (150ยฐC) and place them on the rack for about five minutes.

Meal prep

Feel free to make large batches of Cloud bread ahead of time so you can make this delicious sandwich in no time. You can also prepare bacon in large batches and keep ready made in an air-tight container in your fridge for up to a week (as if bacon ever lasted that long, huh?). Perfect for a snack or to use as a salad topping, to add to your morning eggs or to a sandwich like this one.

How about mayo?

We think homemade mayo beats store bought versions any day but sometimes you just don't have the time, energy or ingredients to make it yourself. The ones you buy in the supermarkets can vary in quality. Read the labels and try to steer clear of brands using sugar.

    I've been making about 2 batches of oopsie bread a week for my wife and I, two double recipes, 12 eggs each time. This week, in a hurry, I made the Pizza dough with egg and shredded cheese. Tried adding some psylium husk and baking powder and salt to see if texture would work. First try, worked out nice. Made BLT's, burgers, so far with it and, although not as light and fluffy as oopsie, not a bad substitute at all and so much quicker. Each bun, or slice worked out to the equivalent of one egg.

    I don't like cream cheese, or feta cheese, can I change for regular while cheese or swiss or pepper jack cheese

    I have to be careful about making bread substitutes because bread is a "trigger" food for me. I've made oopsie bread twice in the past 5 months. It works great for a sandwich but I have trouble getting past the "egg smell" when I'm eating it. I sprinkle garlic powder and a little parmesan on before baking and it helps.

    I've tried making these exactly per the recipe but mine turn out very flat (less than 1/16" thick). I was careful to whip the egg whites to firm peaks and turned the whites into the egg/cream cheese mixture carefully and slowly just until combined. Does anyone have any ideas why mine could be turning out so thin? Thanks!

    I am using the app carb manager to track my macros. When I copied the url for one of the recipes Iโ€™ve used, the %โ€™s were way off. It was saying there was 1 gram of fat, no carbs, 7 calories, etc. what am I doing wrong? Anyone familiar with this?

    It was delicious! The way it turned out I mean - I had some troubles with the patties. The egg whites didn't want to turn solid, they were still a bit watery after long time mixing them, so I gave up and just continued with the next step. Then in the oven, 5 minutes in and the patties turned into one pig patty! :D I had to cut the patties out. But they tasted awesome anyway. The cream cheese was recognizable and they didn't taste like ordinary egg patties. Yum.

    I don't think you could taste the psyllium husk, it's added for better consistency, not to add flavor. I made this with psyllium and all and the only thing I tasted except the eggs was the cream cheese :)

    This is an awesome quick meal. The Oopsie bread really helps when you're missing the convenience of sandwiches. I made 4 batches of the bread and froze it. I cut little squares of parchment paper to place between each slice since it is delicate and it worked great.

    For the novice "baker" , these instructions could use more detail. Firstly, this is much like making meringues... to get nice stiff peaks in your egg whites, use only room temperature eggs, only add your salt once you have soft peaks in your egg whites. I use 2 baking sheets per batch of these, 4 oopsies per sheet, so they can Puff up nicely... I like my Oopsie sandwiches to look as big as possible. I add garlic salt in place of regular salt, along with some onion powder and dried oregano to eliminate some of the egg flavour... they come out perfectly every time.

    Oh, and as an add on... ensure there is noooo trace of yolk in your egg whites, or they will NOT foam into the stiff peaks required for this recipe.

    I am gob smacked! I added 1/2 tbsp of wasabi paste to Hellmannโ€™s Mayo and this just made the sandwich pop. Fresh tomato from my garden that is candy sweet gave this just the right balance of sweet/salty/hot. After 20 months of low carb I started snacking on chips and other junk food as the summer family came to visit. A great mistake! I felt terrible, started to bloat, and could not get satisfied and not to forget to mention my weight increased by 5 lbs. I had worked hard to lose 50lbs and the weight gain was the killer. I am now back in ketosis and cravings for junkfood and and sweets are gone. Iโ€™ ve dodged a bullet. Thanks to diet doctor and these great recipes and meal plans I am back on track.
