Is there a more heavenly taste combo than bacon, lettuce and tomato? Just the mere mention of "BLT" and the clouds start to part! We paired this mouthwatering, keto version with fluffy cloud bread, also known as oopsie bread. Oops, it's bread! Gluten-free and grain-free, it's a heavenly low carb take on a classic sandwich. Indulge.

Instructions

Cloud bread

  1. Preheat oven to 300ยฐF (150ยฐC).
  2. Separate the eggs, with egg whites in one bowl and egg yolks in another. Note, egg whites whip better in a metal or ceramic bowl as opposed to plastic.
  3. Whip egg whites together with salt (and cream of tartar, if you are using any) until very stiff, preferably using a hand held electric mixer. You should be able to turn the bowl over without the egg whites moving.
  4. In the bowl with the egg yokes, add the cream cheese, psyllium husk, and baking powder and mix well.
  5. Gently fold the egg whites into the egg yolk mixture โ€” try to keep the air in the egg whites.
  6. Place two dollops of the mixture per serving on a paper-lined baking tray. Spread out the circles with a spatula to about ยฝ inch (1 cm) thick pieces.
  7. Bake in the middle of the oven for about 25 minutes, until they turn golden.

Building the BLT

  1. Fry the bacon in a skillet on medium high heat until crispy.
  2. Place the cloud bread pieces top-side down.
  3. Spread mayonnaise on each bread.
  4. Place lettuce, tomato and fried bacon in layers between the bread halves.

Tomato tip

Some of the best slicing heirloom tomatoes are Beefsteak, Brandywine, Mortgage Lifter, Cherokee Purple, and Black Krim. Watch for these at your local farmers' market for a BLT upgrade!

How to store cloud bread

The bread keeps in the fridge for 2-3 days or in the freezer for up to 3 months. Put a layer of parchment paper between each bread so they don't stick together. That way you can easily grab as many as you need.

You can thaw frozen cloud bread at room temperature or in the fridge. They taste their very best if you toast them once thawed but you can also reheat them in the oven. Preheat to 300ยฐF (150ยฐC) and place them on the rack for about five minutes.

Meal prep

Feel free to make large batches of Cloud bread ahead of time so you can make this delicious sandwich in no time. You can also prepare bacon in large batches and keep ready made in an air-tight container in your fridge for up to a week (as if bacon ever lasted that long, huh?). Perfect for a snack or to use as a salad topping, to add to your morning eggs or to a sandwich like this one.

How about mayo?

We think homemade mayo beats store bought versions any day but sometimes you just don't have the time, energy or ingredients to make it yourself. The ones you buy in the supermarkets can vary in quality. Read the labels and try to steer clear of brands using sugar.

Seriously delicious! The consistency is great and the egg taste is not super overpowering like other cloud breads Iโ€™ve tried. Definitely making this again.

The bacon weight is for raw bacon.

If you can find an almond milk based cream cheese, that sub should work well.

Mine came out fragile, almost powdery maybe. Not sure how to describe it but i assume itโ€™s the egg white?
  10. Siobhan Murphy
Make sure the bowl you are beating the egg whites is spotlessly clean and the beater to.ciz if any trace of grease the eggs won't beat

The psyllium husk powder? You can frequently find it in the pharmacy section - it is unflavored/unsweetened fiber that's frequently used to treat digestion issues like Metamucil.

I usually order one of 2 brands on Amazon, and your recipes come out delicious; however, one day I ran out of psyllium husk and bought some unflavored Metamucil like people have said they use. And the recipe which I have made tons of time was a flop with taste and texture. I immediately through it in the garbage and reorder the psyllium husk that I have been using. I am simply saying that I have seen people post that sometimes the recipes don't come out right. It could be the brand of psyllium husk.

What brand of psyllium husk are you ordering from Amazon?
  18. Dana
I usually buy Jiva Organic Whole Husk Psyllium, but I believe one time I ordered Yerba Prime Psyllium Whole Husk, and both worked great. My recipes always come out like described. Good luck!

I made this this morning. I watched 3 videos on YouTube prior because I didn't have psyllium husk. My grocery store didn't sell it except as a diet supplement. However, according to google, chia seeds were listed as a replacement for psyllium husk. Guess what, my carb eating boyfriend loved it!

I made this exactly to the recipe. I found it crumbly and had to eat my sandwich with a fork.

Psyllium is a unique ingredient, there's no good substitute.

We have not tested this recipe with cashew nut cheese in place of the cream cheese.

Wonderful recipe. If making extra to freeze, be patient and bake the second batch separately. I found with two trays, the bottom ones didnโ€™t look as good (tasted the same though) yes, I have a fan forced oven.

This total batch makes 4 servings. If you get 8 buns then a serving would be two pieces.

Hi could you do a quick video clip of the process of folding the Oopsie mixture into the egg white mixture. I was concerned with the texture being lumpy. You can only do so much before you lose too much air and the quality suffers. Thanks, J's wife.

It would be approximately 1.5 from the cream cheese and the eggs.

I've tried a few Keto bread recipes and my thoughts have been, "Wow. Only in my wildest imagination would I consider this 'bread' ".
However, the Cloud bread part of this recipe is great! It's versital, light, toastable, grillable (like for grilled cheese sandwiches), not oily, and doesn't take over the rest of the recipe.
    Thank you.
PS My one suggestion for your instructions would be to bring the cream cheese and eggs to room temp, and add 1 yoke at a time when blending with the cream cheese.

No, cloud bread is not available in stores. There are no preservatives, so it would not be shelf stable for long enough.

How do I get all these wonderful recipes without going into FB every time. I donโ€™t have a printer. Iโ€™m other-words is there a site that shows each one consistently? They are ALL what I need, if they are keto. I have some cookbooks but nothing like all these recipes for breakfast, cloud bread, pork chop recipes, etc.

I'm not sure why you're going through Facebook. All of our recipes are here on our website. Click the Recipes tab at the top of the page. If you have an Apple phone, we do have an app called Diet Doctor Eat that links straight to our recipes.

Psyllium husk is not corn husk. Corn flour would not be keto friendly.

Chia seeds don't work well for replacing the psyllium in all recipes unfortunately.

Hi. I am very confused. The keto mayo recipe itself contains over 500 calories per serving. The BLT recipe without the mayo is a little under 350 calories per serving. When you add the mayo to the BLT, it puts the calories at around 850. I know they say not to count your calories, but I'd like to know what exactly I'm putting into my body. I think I'm missing something. Can someone please help me where the 498 calories per serving on this page comes from?
