Instructions

Instructions are for 24 servings. Please modify as needed.

  1. Preheat oven to 350°F (175°C) degrees.
  2. Line a 9” by 13” (23 x 33 cm) baking dish with parchment paper.
  3. Use a hand mixer or stand mixer to combine the butter, almond butter, eggs, and sweetener. Mix well until the sweetener is thoroughly incorporated.
  4. Add the cocoa powder, almond flour, baking powder, salt, water, vanilla extract, and instant coffee powder and stir until smooth. Lightly mix in the chopped chocolate bar.
  5. Pour the mixture into the baking dish and smooth with a spatula. The batter will be thick.
  6. Bake for 25 to 28 minutes or until just set. Do not overbake or the bars will be dry.
  7. Let cool for 20 to 30 minutes before cutting.

Tips

For a less sweet brownie you can reduce or eliminate the erythritol sweetener.

For an even more decadent dessert, serve with unsweetened whipping cream, beaten to soft peaks.

Store covered in the refrigerator to prevent drying out.

Can I make these without the erithrol or will they not come out any good? as I don’t use any type of sweetness. I know they may not taste as sweet but I’m okay with that

These have not been tested with no added sweetener.

They’ll be fine without the sweetener. That’s how I’d make them - the almond butter and 80% chocolate will add enough sweetness for those used to eating keto. Might not be so palatable for those who eat a ‘normal’ diet if you’re sharing.

Dairy butter and almond butter are very different in taste and texture.

I just made these and they are very good! I added 1/4 cup of chopped pecans and they were a great addition!

These turned out very well for me. I froze them and microwave them one at a time. Very decadent with whipped cream on them. I used crunchy almond butter as it was what I had, and it replaced the need for chopped nuts in the brownies. I really liked the coffee overtones. I used a little less erythritol than called for, plenty sweet for me.

Is it possible they were overbaked?

I Followed the recipe exactly the mixture was very thick, it wouldn’t pour into the tray is this normal. I ended up adding more water to loosen the texture as it looked more like sponge texture.
Baked for 20 mins and they were still dry

As shown in the video, this should be a very thick batter.

These are delicious. Brought them to a dinner party to share for dessert. They were very well received - both adults and kids loved them. We enjoyed ours with Keto icecream and a sliced strawberry on top. Thanks for the recipe.

Yes, but as they have different levels of sweetness, that amounts won't be the same. There may be a conversion chart on the bag.

What is an alternative for almond butter and almond flour? I see a lot of recipes that ask for these, but I have a nut allergy.

You can replace it with coconut flour but not in equal amounts. 1 cup of almond flour can be substituted for ⅓ cup of coconut flour. You might also need to add additional eggs.

The math of this recipe doesn’t add up. If you use 160g of erythritol that’s 160g of carbs from the sugar substitute alone. Not to mention the carbs (although low) from other ingredients.
This means if you decide the recipe by 24 each brownie square will be at LEAST 6/7g per square?
    Am I missing something?

For our recipes, we deduct erythritol as part of the net carbs. Erythritol is generally safe and does not affect blood sugar for most people.

Lactose free butter (or ghee) should work well in this recipe.

I used sunflower seed butter, because I was out of everything else and they came out just beautifully and delicious. I will try next time with less sweetener, I keep getting a tummy ache from erythrit.

These are excellent, even when I overcooked and they became dry. They freeze well to.
My question at the end of video recipe it shows 2g in orange ball but the heading of the recipe has 1g in green ball.

Please can you confirm which is correct ? Many thanks

They are 1g net carbs per serving. If the recipe was updated, the video carb count may reflect the prior information.
