Keto cheese-filled chicken breast with guacamole

Cheese-filled chicken
- 1½ lbs 650 g chicken breastchicken breasts
- 2 tbsp 2 tbsp olive oil
- 1 (5 oz.) 1 (140 g) green bell peppergreen bell peppers or red bell pepper, finely choppedred bell peppers, finely chopped
- 1 1 garlic clove, finely choppedgarlic cloves, finely chopped
- 2 tbsp 2 tbsp pickled jalapeños, finely chopped
- ½ tsp ½ tsp ground cumin
- 3 oz. (6 tbsp) 85 g (90 ml) cream cheese
- 1 cup (4 oz.) 240 ml (110 g) Pepper Jack cheese, shredded
- salt and pepper
- 4 4 tooth picktooth picks
Guacamole
For serving
- 1 cup 240 ml sour cream (optional)
- 8 oz. (4 cups) 230 g (1 liter) leafy greens or lettuce

Making low carb simple
Instructions
- Preheat your oven to 350°F (180°C).
- Sauté bell peppers and garlic in oil until soft. Place in a bowl and reserve to cool for 5 minutes.
- Add jalapeños, spices, and both kinds of cheese to the bowl. Mix well.
- Cut chicken breasts lengthwise partway through, along the thinnest part, so you can open it like a book.
- Add a big dollop of cheese batter and close with a toothpick. Season chicken with salt and pepper. Fry until golden brown, in oil or butter. Place in a baking dish.
- You can place the remaining cheese batter on top or just in the baking dish.
- Bake in the oven for 20 minutes or until the chicken breasts are thoroughly cooked. Remember to remove the toothpick before serving.
- Serve with leafy greens, a generous amount of guacamole, and sour cream.
Guacamole
- Peel the avocados and mash with a fork, grate or chop the garlic finely, squeeze the lime, and pour in the juice.
- Add tomato, olive oil, and finely chopped cilantro. Season with salt and pepper to taste, and blend well.
Tip!
Don’t throw away that avocado pit! Place it in the guacamole to keep it green.
I have one important question. One chicken breast consists of two parts. So for one serving it is the whole chicken breast with both of these parts? Or is one serving one half of this chicken breast? I was just confused, because some call the whole thing "chicken breast" and some call only one half of it "chicken breast".
I know that I should eat until I don't feel hungry anymore, but I just need to know what is right :D

This is my new favorite dish so far!
I did notice though that there is an inconsistency with the guacamole recipe/ingredients.
It says to grate the onion but onion isn’t listed in the guacamole ingredients.
I checked it against your other guacamole recipe (the one dedicatedly purely to guacamole) and it states onion in the ingredients list there.
It was a bit confusing so thought it was worth a mention.
I did not make with the Guac. didn't feel it needed any more richness....served with the green beans and avocado.
(Husband is taking leftovers for lunch tomorrow)
I just joined this program and being a cook for most of my working life (I am 75) I must compliment the recipes.

They are part of the cheese mixture that's added to the inside of the chicken.
Yes, a boneless chicken breast will work best.
I echo the woman above who said your recipes have inspired her to cook again. I "retired" from cooking once the kids were gone from home. That was a long time since we had 8 kids with an 18 year span. So we ate rotisserie chickens, hamburgers and Taco Bell. Now I cook for fun. I look forward to cooking dinner.
