Ingredients

  • 8 oz. (5 cups) 230 g (1.2 liters) Romaine lettuce
  • 5 oz. 140 g cherry tomatoes
  • 1 (7 oz.) 1 (200 g) avocadoavocados
  • 4 tbsp 4 tbsp fresh cilantro
  • 1 (4 oz.) 1 (110 g) yellow onionyellow onions
  • 1 (5 oz.) 1 (140 g) green bell peppergreen bell peppers
  • 2 lbs 900 g boneless chicken thighs
  • 2 oz. 55 g butter
  • salt and ground black pepper
  • 2 tbsp 2 tbsp Tex-Mex seasoning
  • ยพ cup (3 oz.) 180 ml (85 g) Mexican cheese or cheddar cheese, shredded

Instructions

  1. Prepare the toppings. Tear the lettuce, chop tomatoes, dice avocados, and clean and chop the cilantro. Set aside.
  2. Slice onion and pepper fairly thin.
  3. On a separate cutting board, cut the chicken into thin strips.
  4. Fry the chicken in butter in a large skillet over medium-high heat. Salt and pepper to taste. When the chicken is almost cooked through, add onion, pepper, and Tex-Mex seasoning.
  5. Lower the heat and continue to fry while stirring for a couple of minutes until the chicken is thoroughly cooked and the vegetables have softened just a bit.
  6. Place lettuce in a bowl and add the chicken mixture. Add shredded cheese, diced avocado, chopped tomatoes, and fresh cilantro.

Tip!

A spoonful of your favorite salsa can be a nice addition. Also, feel free to substitute guacamole for the avocado in this fajita bowl.

    We don't want to promote to much "counting" that's why we only have the carbs in gram (fat and protein in %).

    But we know about this demand for additional nutritional info and I think we will provide more info soon.

    I plugged it into Verywellfit.comโ€™s recipe nutrition calculator. I was astounded!! For 3 servings, this is the breakdown: Cal 942, Fat 68.1, Protein 67.2, Carbs 12. This is not a low carb meal. Iโ€™ve found the same problem with a couple if the other recipes from this page. Very disappointed.

Iโ€™ve found the same problem with a couple if the other recipes from this page. Very disappointed.

    I used chicken breast and both me and my teenager loved it. Made a big batch of the tex-mex seasoning, it's so much better than the store bought ones.

    I put this meal into MyFitnessPal and it came in at almost 13g of carbs, I used the uk version which has fiber already deducted, but confused as I want to do this right.

    I'm am towards the end of my first doing the 2 week getting started challenge and I have just made this meal (with extra for tomorrow lunch). What a great recipe! I swapped green pepper for yellow pepper as my local store didn't have any. I also followed diet doctor's recipe for tex-mex seasoning and it all tasted amazing. The chicken and vegetables were spicy and full of flavour. I didn't use any sour cream, but did have some mayonnaise with it. This is one of my favourites so far!

    Hi Karen! But if those numbers are for 3 servings, 1serving would have only 4 carbs and a little over 300 cals.

    I have a question, when the recipe makes 4 servings, we are supposed to eat 1 serving and save the rest for another day correct? However, what is considered one serving, 1 cup? Furthermore, are the calories indicated for 1 or 4 servings? Because sometimes it is alot! Thank you!

    We are in the first week of the challenge and have yet to have a meal that wasn't super delicious! I used a small dollop of yoghurt which went well with the spicy flavour as I also added some sun cured jalapeรฑos, which bumped up the heat volume! Very tasty!

    Are you eating more servings than you are suppose to? Also, are you just eating but not drinking plenty of water or including exercise into your routine? You can't just eat high fat and pray you lose weight. Even though cutting all the carbs and sugar helps, there has to be more to it. Also, ketogenic diets are not for everyone. Your body may process these foods differently than someone else. They will lose weight quick but you may not. It just takes learning what your body can handle and what works for you.

    We make all of these recipes for the whole family of 4 to eat, but that makes it difficult to tell how much of the food each person should eat. How do you recommend splitting the portions up so that we don't eat too much or too little?

    In America Cajun seasoning (which originated from Cajun culture in Louisiana) is very very different than Tex-Mex seasoning (which is short for Texas-Mexican) itโ€™s a Texas twist on a combination of Mexican spices. Usually used as the seasoning for tacos, etc. They taste very different so I definitely would never sub one for the other. :)
    There is a Tex-Mex seasoning recipe on the diet doctor website though! Itโ€™s decent!

    It's simply cajun - as in cajun chicken!!! No such thing as Tex-Mex in England - it's American again! Ha, ha!

    What type of cheese is 'Mexican cheese'? I live in Holland and in the shops there is of course an abundance of cheese, but no Mexican. When I do a google search, I find many different kinds of cheese from Mexico. How would this compare to for instance an aged (real) Gouda or Cheddar?

    I used mature Dutch cheese (Gouda style) and it was delicious! Put the onions in a bit earlier than in the recipe. I like them on the soft side. Tex-mex seasoning was not available, so I used 'Taco-mix'. Seemed about right. Very nice recipe.

    This is my very favorite keto recipe. We have been making this in double batch sizes and using only 4 ounces of butter instead of 6 and it is perfect for us. Also added a bit of cayenne in our tex mex seasoning and it tastes sooooo good! Love it!

    Una - Use conversion charts online to see what a cup is in metrics. It is not a standard coffee cup, but a real unit of measure in the US. Also a tablespoon is an actual measurement, not an ordinary spoon out of your silverware.

    But as a British person, I need to know how much a half a cup of something is as we don't cook in cups. We rarely drink out of them these days but prefer mugs. If I have to buy a cup, then I need to know the size you mean.
    On another note, you are quoting tablespoons of things in recipes. I worked out this morning, thanks to the recipe saying a tablespoon (8g) of coconut flour is not a tablespoon in Britain but a dessertspoon. You need to be a bit careful with giving out measurements in the recipes when you are aiming at an international rather than just an American audience. We also measure solids in grammes and liquids in millilitres, or some of us older ones in ounces and pints. Hard to work out when you quote millilitres for some solids on here. Just don't to end up putting food in the bin over measurements being misinterpreted inadvertently.
    Thanks for all you're doing. A bit more communications with yourselves behind the scenes would also help, but otherwise it is a great site and I've learnt a lot in a week already! And for me it is an enormous leap of faith.

    I will be finishing up my first week tomorrow and I am happy to say I lost 8pounds so far... I know I am not suppose to weigh myself until tomorrow but when I put on a pair of pants that were too small last month and they went right on me after day 4 I had to get on the scale today. The meals are great and Iโ€™m feeling great... Iโ€™m looking forward to start week 2.
