Ingredients

  • 4 tbsp 4 tbsp almond flour or hazelnut flour
  • 2 tbsp 2 tbsp cocoa powder
  • 4 tbsp 4 tbsp granulated erythritol
  • 1 tsp 1 tsp baking powder
  • ยฝ tsp ยฝ tsp vanilla extract
  • 2 pinches 2 pinches salt
  • 2 2 egg, beateneggs, beaten
  • 3 tbsp 3 tbsp melted coconut oil or butter
  • 1 tsp 1 tsp coconut oil or butter for greasing the mugs
  • ยฝ oz. (12โ„3 tbsp) 14 g (25 ml) coarsely chopped sugar-free dark chocolate (look for stevia, erythritol, and/or monk fruit in the ingredients)

Instructions

Instructions are for 4 servings. Please modify as needed.

Microwave (7 minutes total time)

  1. Combine dry ingredients in a small bowl. Add eggs, melted coconut oil or butter, and chocolate. Mix until smooth.
  2. Equally divide batter into four, well-greased coffee mugs or microwave-safe ramekins.
  3. Microwave on high for 1-1 ยฝ minutes (700 watts). Remove and let the mug cakes cool for one minute.

Oven (20 minutes total time)

If you donโ€™t want to use your microwave, you can bake the muffins in the oven. In fact, if you have the time, we recommend that you do. Microwaves vary in capacity and the results depend upon the size of your mug, etc.
  1. Preheat your oven to 350ยฐF (175ยฐC).
  2. Combine dry ingredients in a small bowl. Add eggs, melted coconut oil or butter, and chocolate. Mix until smooth.
  3. Place liners in a muffin pan, and fill them halfway.
  4. Bake for about 12-14 minutes or until springy when touched gently in the middle.

Tip!

Keep in mind that the mug cakes will initially swell to double their size when baking in the microwave, then they will shrink back down. Fill the mug to a maximum of two-thirds. Special occasion? Whip up some keto buttercream and pipe a nice rosette on top. These muffins can also be decorated with berries and whipped cream.

    I just made these and they were DELICIOUS!! I substituted the granulated erythritol with SUKRIN gold brown sugar substitute and used Lily's Dark Chocolate chips since I didn't have anything else. It was a nice afternoon treat. Thanks for the recipe.

    That may depend on the brand. Some almond meal is more coarsely ground and still has some of the tougher bits of skin. Some brands call almond flour almond meal instead. You want something that is very finely ground with no skin in it.

    I decided to try a spicy version of these so hereโ€™s what I did:

    Omit the chocolate and replace it with my favourite spices like cinnamon, cloves and ground ginger.
    Top with your favourite DD buttercream!

    What a hoot! Highly recommended xx

    I made these last night and they were beautiful IF you add more butter. Add more butter before cooking, like almost double it, and then add it afterwards. It makes a world of difference to its moisture and makes it so much more palatable. I did it with 90% dark chocolate and that was pretty strong, so maybe that made a difference, but ADD more butter!

    I halved the recipe and made two, one each for my husband and I for a speedy dessert the other day. Because it was a last-minute make, I didnโ€™t have any chocolate or cocoa powder so instead I added about 5 fresh blueberries to each ramekin and microwaved 2mins each (one at a time), served with heavy whipping cream and hey presto, a dessert fit for company! Delicious...

    These muffins taste great! I tried one fresh out of the oven. Love that they are only 2 carbs per serving. This will be one of my go to recipes. I may incorporate peanut butter next time, maybe some raspberries, whipped cream...the possibilities are endless!

    If you wanted to make up the batter the night before, it should be fine in the fridge overnight!

    These were fantastic!!! This is worthy of being called Keto Devilโ€™s Food Kake. So satisfying! Whatโ€™s great is compared to cake, you can just make a couple of servings and you wonโ€™t have a big leftover cake staring back at you saying โ€œeat moreโ€.

    Microwave power can vary greatly and often require adjustments in cooking time.

    I made this and ate it with the Keto Buttercream with Cinnamon and it was so good it hit the spot!!!! I am so happy and will make this again for my next craving! As I didnโ€˜t find the sugar free dark chocolate with sweetener I replaced it with 100% dark chocolate (Lindt or M&S) and increased the amount of sweetener a bit. Even my boyfriend loves them and he is not eating keto. Could someone tell me how long the batter keeps in the fridge?

    Covered, the batter should keep for up to 24 hrs. I am glad you both enjoyed this one!

    I've made this many times and do 12 in muffin trays - they freeze well - and what's best is you don't get left with craving for more - my friend and I find half a muffin each (slightly heated) with some raspberries and cream is just the perfect amount of yumminess after our evening meal.
    Love the other suggestions - omit chocolate, add other spices, coconut flour with extra egg - will try these next .... although I just love the recipe as is.

    I love this little cake! I use less sweeter (Swerve) and I don't put in the chopped chocolate. Sometimes I mix just a bit of softened cream cheese and add a drop of vanilla and Swerve and put a dollop on top of the cake. Yummy!!

    Used ingredients above then poured into instant pot egg bites mold, 3/4 full. Covered mold with aluminum foil then pressure cooked on high for 10 minutes, 15 minutes natural release. Dusted lightly with erythritol powdered sugar. They turned out light, fluffy, & delish.

    Next time I'll use the 6 servings so as to fill all the mold cups. The 4 serving quantity filled 7 of the 8 cups (3/4 full).

    Just made this in our van and it was the most decadent treat! Added a sprinkle of cinnamon on top and drizzled with coconut milk. Took way longer to prep and cook at a whopping 5 minutes than to devour it and thatโ€™s a good thing. Next time, we have decided we shall try melted coconut butter on top.
