Ingredients

  • ยฝ cup 120 ml melted coconut oil, melted (save some for greasing the pan)
  • 12 12 large egglarge eggs
  • 1 cup (31โ„3 oz.) 240 ml (95 g) coconut flour
  • ยฝ tsp ยฝ tsp sea salt
  • ยฝ tsp ยฝ tsp baking powder

Instructions

Instructions are for 16 servings. Please modify as needed.

  1. Preheat the oven to 350ยฐF (175ยฐC). Grease a 9x5x3" (23x13x8cm) loaf pan and set it aside.
  2. In a large bowl, whisk together the eggs, and coconut oil.
  3. Add the dry ingredients, and stir until combined.
  4. Spread the batter in the loaf pan. Bake on the middle rack for 40-50 minutes, or until a toothpick comes out clean, after inserting in the center of the loaf.
  5. Set aside to cool for 15-20 minutes, and then slice to serve.

Tips

We love this bread with soups and sandwiches.

This bread is neutral in flavor but if you want to you can add your favorite spices or why not try 1-2 tablespoons of our holiday bread seasoning?

You can store this bread in the fridge for 3-4 days or in the freezer for up to 3 months. Make sure you slice the bread prior to freezing it and place parchment paper between each slice. That way you will always have easy access to the number of slices you need. We recommend using a toaster or toaster oven for reheating.

Troubleshooting

Did your bread turn green when baking it? It has been known to happen with this recipe. Don't worry, it's perfectly safe to eat.

The green color is the result of a chemical reaction between the leavening agent, in this case baking soda and chlorophyl or chlorogenic acid. This reaction is most common in recipes using sunflower seeds or meal but has been known to happen with other flours as well.

To prevent this from happening you can reduce the amount of baking powder by one third and/or add a couple of teaspoons of vinegar or lemon juice to the wet ingredients before adding them to the dry ones.

    This is by far my favorite lchf bread, but instead coconut oil, I use melted butter or olive oil - less than it says in original recipe. It says 1/2 cup, but I use around 1/3. So maybe you are right about that.
    It has never turned out green or something similar, and because I don't use coconut oil, it is more like bread then a cake. And I can't count how many times I've made it. I like it better when toasted, but it is just fine without that.

    Best way to bake this bread is to use muffin tins....comes out like corn muffins and is delicious with melted ghee or butter on them.

    well I didn't read the reviews on this before I tried it . Mine also didn't rise , , was a golden yellow ,and very dense and tasted pretty much like corn bread LOL . Not worse the carbs . So far I have made 3 different bread recipes the coloud bread was just awful a lot like a dry omelet. then I did the keto hot dog buns , they tasted the best ...but I hated to look at the inside was totally empty like a hollow shell and webbed looking I think from the eggs ...Can another suggest a bread ? Man the picture of this coconut bread looks like real bread hey maybe it is LOl LOl ....BTW peter thanks for writing back :D

    Hi, I loved this coconut bread , it tastes delicious, it rises but it did not browned, so I put it in the oven in the toast setting, it browned more but not as the one in the picture. I'm going to try this again.

    Keto seed bread is the best one I have made so far. I make a loaf and slice it and it keeps for the week in the fridge. I toast one piece with breakfast each morning. The curry fish dish is dreadful so is the pizza. I liked the chicken casserole, Asian cabbage stir fry so far.

    If you eat a few gram of carbs (any sort) it will not kick you out of ketosis.

    Hi peter.can we use prune or plum paste 1tsp daily to resolve constipation issue?wil it kick us out of keto?do reply my other msgz as well.thx

    Hi Shazi, that is going to depend on what country you are in as different countries use different units of measurement and therefore the lab ranges will vary. Your doctor can test your fasting insulin and let you know if it is within the acceptable range.

    Is the number in a circle? I am not sure exactly what you're referring to, but I assume you're talking about the bubble with the carb count number in it. That number is how many grams of carbs are in each serving of that recipe.

    Green means the recipe is suitable for the stricter ketogenic diet, orange is moderate low carb and red is recipes good for people following a more liberal low carb way of eating.
