Ingredients

  • 5 oz. 140 g diced bacon or chorizo
  • 2 tbsp 2 tbsp butter
  • 8 oz. (7½ cups) 230 g (1.8 liters) fresh spinach
  • 8 8 eggeggs
  • 1 cup 240 ml heavy whipping cream
  • 5 oz. (1¼ cups) 140 g (290 ml) cheddar cheese, shredded
  • salt and pepper

Instructions

Instructions are for 4 servings. Please modify as needed.

  1. Preheat the oven to 350 °F (175 °C). Grease a 9x9 baking dish or individual ramekins.
  2. Fry the bacon in butter on medium heat until crispy. Add the spinach and stir until wilted. Remove the pan from the heat and set aside.
  3. Whisk the eggs and cream together and pour into a baking dish or in ramekins.
  4. Add the bacon, spinach, and cheese on top and place in the middle of the oven. Bake for 25–30 minutes or until set in the middle and golden brown on top.

Tips!

Try serving with shredded green or red cabbage on the side, with a homemade dressing. Delish!

You can also bake this frittata in the oven at 350 °F (175 °C) for about 20 minutes.

    I didn't love the recipe. It was good, but not really worth the effort. Also I didn't think 1 serving was enough for me. the recipe isn't bad, but I wouldn't make it again.

    Sounds delicious, and Keto diet friendly. The only thing I would change is instead of trying the bacon in butter, I prefer to grease the pan with butter, or add avocados to supplement the fat.

    You can just leave out the cream. It's purpose is to add more fat. Use what you like.

    Just enjoyed this dish. I used bacon and chorizo sausage. It's like bacon and egg pie of old. I had sliced avacado and cherry tomatoes on the side. Very nice.

    I absolutely love this recipe. I used Gruyere cheese, frozen spinach and pancetta in place of bacon. I also added cooked onion. This is more like quiche without the crust instead of a frittata. I kept in the 1 cup of cream. This is a staple in my diet. Sometimes eat for breakfast and lunch.

    Could I substitute another leafy green (like arugula or mustard) instead of the spinach and still have about the same nutritional values?

    Wonderful, delicious recipe. Any leftovers heat up perfectly in the microwave. We make this in a standard square pyrex baking dish (4 servings) and find we need to bake a bit longer than instructions - the middle is not cooked through at 30 min. so we bake for about 40 min. This is a favorite in our household. Highly recommend!

    Sarah... I actually had a chef tell me that spinach is even healthier after cooking as it releases something it doesn't when fresh... unfortunately, can't remember what it is, but sounded to me like it's a win for your body either way, but even better when cooked.

    I have made this more times than I care to count....I add some red pepper flakes and chopped garlic to spice it up a bit. I cook one morning and I have breakfast for four days.

    I think it’s potassium and/or magnesium that is present in higher amounts in cooked spinach over raw. Two things which you can be low on when following a Keto Diet.

    I'm curious how you figure up macros. I put this recipe into my keto calculator using one fourth of the ingredients (since it serves 4) and I came up with different macros. I got 36g for fat, 20g for protein, 6g for carbs, and 413 net calories. Can you help me understand this? Thank you.

    Hi Michelle - I'm with ya on this one - the way I do this is its the weight uncooked if the directions say to cook the "cook the bacon" and weight cooked if just says to "add the cooked bacon"

    Seriously though how much of a tragedy would it be if a dish had a little "too much" bacon?

    I make this using goat cheese ( mixed in with the eggs and cream......sometimes add in a bit of 14% sour cream, too), and substitute mushrooms,onions and peppers (fried until soft) for the meat. Place the veggies in a well buttered casserole dish, pour the egg/cheese mixture over them, sprinkle with some grated cheddar and a sprinkling of parmesan cheese, and bake at 350 degrees for about 30 mins. Makes a nice lunch dish with a side salad. Very tasty !

    skip the cream by making it with almond meal, 2 eggs, baking powder and liquid of your choice (water, coconut cream, almond milk) to a thickish consistency (similar to cake batter) or thinner if you prefer piklets.

    I prepared this recipe this morning and it turned out amazingly tasty anf filling. Since it was going to be only for my husband and me, I cut the ingrediets in half, so there was almost no leftover. One point is that I did leave the mixture 7 minutes more inside the oven since I was afraid that it would not cook conpletely to my satisfaction. The result: A wonderfull meal that, in my opinion, can be eaten any time of the day!
    My husband, who is a very picky eater, loved it!!!!!!

    This recipe turned out great. Only thing extra that I did was I added chili powder, paprika, and a touch of ceyenne pepper. That with the chorizo sausage and it was very satisfying for my husband and me.

    Carb count for chorizo can vary widely by brand. If you have a higher carb brand, try bacon instead.

    You can also just change the number of servings at the top to reflect the number of people you are cooking for if you don't want leftovers.

    Made this today for our Sunday family brunch and everyone Keto eaters and non Keto loved it! Super tasty, I added some goat cheese and cracked pepper. Recommend cooking it fan forced so it puffs up. Served with a small side salad it was the perfect brunch!
