Ingredients

  • 5 oz. 140 g diced bacon or chorizo
  • 2 tbsp 2 tbsp butter
  • 8 oz. (7½ cups) 230 g (1.8 liters) fresh spinach
  • 8 8 eggeggs
  • 1 cup 240 ml heavy whipping cream
  • 5 oz. (1¼ cups) 140 g (290 ml) cheddar cheese, shredded
  • salt and pepper

Instructions

Instructions are for 4 servings. Please modify as needed.

  1. Preheat the oven to 350 °F (175 °C). Grease a 9x9 baking dish or individual ramekins.
  2. Fry the bacon in butter on medium heat until crispy. Add the spinach and stir until wilted. Remove the pan from the heat and set aside.
  3. Whisk the eggs and cream together and pour into a baking dish or in ramekins.
  4. Add the bacon, spinach, and cheese on top and place in the middle of the oven. Bake for 25–30 minutes or until set in the middle and golden brown on top.

Tips!

Try serving with shredded green or red cabbage on the side, with a homemade dressing. Delish!

You can also bake this frittata in the oven at 350 °F (175 °C) for about 20 minutes.

    Changes I made: Bacon makes its own oil, so I skipped the butter in the frying part - I've made it with chorizo and hot pork sausage and I've also deleted the bacon on occasion (still didn't use butter to fry the other meats) - all yummy. I used coconut milk instead of cream and a mix of mozzarella and cheddar cheese. If you like a little heat, try incorporating pepper jack cheese. Enjoy!

    I just started on Keto last week and I made this because I was tired of the taste of pan-fried eggs every morning and this looked easy. OMG! Not only was it super easy to make, it came out perfect, pretty, and delicious! Thanks for sharing. Will make this again and again!

    Wow, I love this recipe. I made quiches all the time prior to going low-carb and despite it being called a frittata, this is a wonderful low-carb quiche. It's very easy to make and came together really quickly. The cook time listed is a little wonky. I started my timer at 20 minutes and then increased the time by 6-8 minute increments until it was fully cooked. I think after everything it probably took around 35 - 40 minutes to fully set. All you have to do to make sure that it's cooked is watch it and jiggle it from time to time. If the middle does not jiggle, it is set. Once it did set, it turned out perfect. Lightly browned on top, a more custard consistency where there was a lot of egg. It says you get 4 servings out of a 9-inch pan (I used a pie pan), but they are pretty large servings and it's very filling. The next time I make this I will cut it into at least 6 servings. HUGE time saver and great for meal prep.

    BUY A COMMERCIAL-GRADE VACUUM SEALER! (and do it now)

    A list of benefits, from a long-time user:

    * Readily available leftovers WILL keep you out of fast food joints. (Buy one for this reason alone.)
    * COOK in bulk. On your time! (Cooking 10 lbs of meat at on a Sunday afternoon is WAAAAAY more efficient than cooking 2 lbs a night over 5 nights! If you work outside the home, or have kids, and your time is limited… this is a game-changer.)
    * Have VARIETY in your leftover selection. (Craving Salmon? Maybe a bbq'd pork-chop? Breakfast casserole? Freaking SOUP!?!? Grab it from the freezer and go! Once you get in the habit of saving ALL leftovers, you'll have a pretty cool variety of already-prepared food at your fingertips. HAVING to eat the same thing you ate last night, is borrrrr-iiiing. Eating it when you're actually craving it again never gets old.)
    * PURCHASE food in bulk and cook it later. (Bulk foods are cheaper. And, if you hunt or fish, saving your harvest is easy.)
    * Keep perishable foods longer. (FRESH guacamole you made 5 days ago will blow your mind!)
    * Portion Control is SO easy (Use a cheap digital scale if you’re OCD.)
    * Vacuum-sealed leftovers are SO much tastier than foil-wrapped, plastic-wrapped or tupperware'd. (This should be higher on the list.)
    * Commercial bags are STUPID cheap. (Literally 1,000 bags for 50 bucks. That's 5 CENTS a bag!!! The rolls of crappy bag material is where the consumer-grade sealers get expensive.)
    * NO tupperware-type containers to clean or store! (If there’s no kitchen sink handy at the office, or if office fridge space is limited, this is GOLD.)
    * Marinade in a fraction of the time.
    * Two words: Sous vide!
    * And lastly, yes... you can vacuum-seal liquids (in a commercial, chamber-type vacuum).

    Vacmaster (I have the VP215) or VacPak-it are two good brands. Use a cheap Foodsaver if you can't afford the others... but if you can, DO! If you incorporate a vacuum sealer into your normal routine, the commercial route WILL pay for itself pretty quickly.

    Yes, that's correct! Weight of meat in recipes always refers to pre-cooked unless otherwise specified.

From what I understand the nutritional value listed is for the whole recipe? I cooked it in a cupcake pan so there are 12 little frittata cupcakes.     The recipe as written makes 4 servings. If you made 12 "cupcakes", then a serving is 3. If you scaled the recipe to make 6 servings then yes, a serving would be 2.

    Deeeeeelicious! I had to bake mine for 50 minutes total. I baked it in a 9 in round glass pan, which has a lid of its own and makes it perfect for refrigerating leftovers in it. My 2 year old loved it, and so did my husband. I'll try it on the 6 and 8 year olds over the weekend. I'm sure it will be a hit with them, as well! I really needed something in my tummy this morning, which doesn't always happen. Having this dish in the fridge was what saved me from a trip to McDonald's or worse. My husband took a serving to work for breakfast, too. Thanks for a really great and simple recipe!!!

    Hey Angela! How was the taste with coconut milk? Isn't the texture more liquid than with heavy whipping cream? Did you prefer it with bacon (when you used coconut milk) or with chorizo? Thanks !

    Chorizo is a very tasty alternative to bacon and it gives it a Mexican flare. I substituted softened cream cheese for heavy cream and it was fabulous!!!

    I make a version - I use 2 packages of frozen spinach (thawed and excess water squeezed), 8oz of cream cheese and 6 eggs and parmesan cheese then opt to add other veggies depending on what my fridge has -

    We do not recommend macro calculators. They can't know what you need. Some day you may need more to eat than others and that's OK. Yes, you can make the spinach in the bacon grease.

    Interesting, and thank you. When I don't count and eat whatever fat I want, I do not see any weight loss. I am very careful of my carb intake and some days I still go over my fat intake and actually gained weight.

    This recipe as written does make four servings. If you set your shopping list for one person, then adjust the serving size on this dish to 2. This will give you 1 dinner + 1 lunch if that's how you have it set on your meal plan. If you adjusted your shopping list for 2 people, then follow this as written for 4 servings.

    Buy a small digital scale. It makes keto eating much easier. I know it seems a pain when you have always used cups/volume measurement. But how much spinach is "2 cups"? Well it depends how lightly or firmly you pack the cup. Much more accurate to use a scale.

    Most recipes hold in the freezer for 2-3 months.

    That's going to be up to your personal preference based on how much fat rendered out from the bacon. If you want to drain some of the grease out, that's definitely OK!

    You can substitute any protein you prefer. Chicken often works well.

    I make this with whatever I have in the fridge. Today I cut up bacon, tomato and mushrooms and put in oven proof tin (cake tin actually) with a little olive oil and plenty of salt and pepper and put in oven on lowest setting (you could cook this part on hob if in a hurry). Then mixed 4 (large) eggs with double cream and added it and put back in oven, again on lowest temperature, for about 20 minutes. Turn off oven and leave egg to finish cooking in residual heat. If I use cooked meat or cheese I add with the eggs so they doesn't overcook. I'm afraid I can't give quantities as I mainly cook 'by eye' as I have been doing this for a while. Obviously if you're strict keto I expect you'd want to weigh the ingredients. This will be enough for me for 3 or 4 breakfasts.
