Ingredients

  • 1 oz. (2 tbsp) 28 g (30 ml) unsalted butter
  • 1 tbsp 1 tbsp cocoa powder
  • 2½ tsp 2½ tsp powdered erythritol
  • ¼ tsp ¼ tsp vanilla extract
  • 1 cup 240 ml boiling water
This recipe has been added to the shopping list.

Instructions

Instructions are for 1 serving. Please modify as needed.

  1. Put the ingredients in a tall beaker to use with an immersion blender.
  2. Mix for 15-20 seconds or until there's a fine foam on top.
  3. Pour the hot cocoa carefully into cups and enjoy.

Serving suggestions

If you want to make your hot cocoa even richer, add a dollop of whipped coconut cream before serving. Or whipped heavy cream if you tolerate dairy.

Replace the water with full-fat milk for a richer taste. But keep in mind that the carb count will go up about 11 grams per cup.

If you want something extra, add a few chocolate shavings or a sprinkle of cinnamon on top!

Substituting ingredients

Use ghee (clarified butter) or coconut oil for a dairy-free option.

Enjoy it right away

This recipe isn't good for preparing ahead of time. Once chilled, the melted butter will set and separate which will leave you with a grainy mixture.

If this accidentally happens, you can reheat it in a sauce pan over medium heat and then pulse it with an immersion blender until smooth and frothy again.

    This will be my incentive to try butter in a beverage. I have been making this recipe of cocoa for years, using canned full fat milk and water, only. It's a bush thing. Regular cocoa powder works but if you buy the Dutch brand whoooeee it is sublime. And so much anti-oxidants too.

    Nicholas, not normally, if you are eating low-carb to manage your blood sugar or/and diabetes, or lose weight, or are addicted to sugar. Look for Hershey's Cocoa, Unsweetened, 8-Ounce Container or similar.

    Nicholas, You need to look for unsweetened cocoa powder in the baking section of your grocery store. Generally near the flour and sugar and other baking ingredients. Anything with sugar is a cocoa drink mix.

    Here's my 2 cents on the hot cocoa beverage:
    I use homemade almond milk (in which I have already added vanilla extract) and 1-2 teaspoons of cocoa powder. I heat up the milk and stir in the powder, until a nice creamy foam is formed. For sweetness, I add liquid stevia (which has nothing but stevia extract and water). It tastes surprisilngly similar to hot chocolate.

    This recipe is perfection if you add a splash of sugar-free peppermint coffee syrup, and also if you do the same and replace the boiling water with fresh brewed hot coffee. This is my winter treat drink for the year. GREAT recipe and so glad I don't need milk in it.

    Could this be made with coconut cream or milk instead of water and still keep carbs low? Hot chocolate is my go-to treat drink year round...I only usually make it with heavy cream.

    Trader Joe's cocoa is sugar free and really good, for a bit of sweetness I add 1 square of 80% chocolate with the cocoa and homemade almond milk and drop of vanilla extract

    I, too, use almond milk, liquid stevia and/ or cream with boiling water. I haven't had it with butter, but that sounds good.

    What's also great is a variation of the "dairy-free latte" with cocoa instead of coffee. Had that this morning for breakfast and added a teaspoon of pure peanut-cream (not peanutbutter) for extra satiety. It tasted great and kept me full till lunchtime.

    The sugar free cocoa is found in the cooking aisle of the supermarket, not the tea A& coffee aisle.

    Cocoa powder mixed with a bit of milk then add lots of cream and either more milk or water, depending on your carb level. It works really well. Cream gives all the sweetness I need ?
    Butter though? It doesn't have the sweetness of cream (I mean double cream nothing added) for me - butter does nothing for coffee (for me).

    I used milk and put heavy whipped cream on top. Also added cinnamon to for a touch of sweetness. It's nothing like real hot cocoa (and I can't stand artificial sweetners) but I think with time I'll get used to it and will probably come to prefer it :)

    I tried this and it was just awful. Having the cacao powder in there with no sweetener made it bitter. Here's what I would do: instead of just water, I put a splash of heavy cream in. If you want it creamier, add more, though I really think the butter adds a loveliness to it so that you don't need too much cream. I added cinnamon because it sweetens a bit and added a bit of Swerve. Rounded out the drink nicely. Fixed my chocolate craving!

    Lisa, please check your ingredients. Cacao powder is just plain awful. Make sure that you have cocoa powder (spelling is slightly different, but it is an entirely different substance). Also you may want to experiment with different brands of cocoa powder and formulations as they vary significantly on sweetness, chalkiness vs smoothness, buttery vs oily, power of the chocolate flavor, etc. I love to bake for Christmas, and the same cake recipe made twice with 2 different chocolates (unsweetened cocoa powder vs bittersweet chips) came out so very differently.

    THOR DID YOU FIND THAT THE TASTE OF ALDI COCOA WAS AS GOOD AS A NAME BRAND. I PLAN ON BUYING MINE THERE BUT WASN'T SURE IT WOULD BE AS GOOD AS HERSHEY'S.

    I make my coffee every morning with cocoa powder, heavy whipping cream and stevia. It fills me up and I don't have cravings for anything. I'm only week 2 of the keto diet.

    Okay, so it's a few months later since I made my initial comment and here're my thoughts on this hot chocolate:

    OMG THIS IS AWESOME I LOVE IT SO MUCH!!!

    I use raw cacao powder to make it (1 heaping spoonful) and mix the powder in the cup with some cinnamon.

    Then I heat up about a cup of whole milk (I didn't like how it tasted with water), and when it's warm enough I put in about a spoon of butter and stir it till it melts. I know a lot of people were saying they don't like the idea of butter but--DON'T LEAVE THIS OUT!!! This is a really important part of making this drink filling since the butter adds a ton of fat and that keeps you satiated. I've made it both with and without the butter, and the times I made it without the butter I found that I was still hungry afterwards. With the butter I'm usually full for a while.

    After the butter is melted I add the vanilla extract. Then I let it heat until almost boiling point and then I pour it into the cup with the cacao powder.

    After it's all mixed I use a whipped cream dispenser to top it with lots of delicious, light, fluffy whipped cream. Sometimes if I want to be fancy I sprinkle some cinnamon on top of the whipped cream, but usually I just leave it as is.

    And that is one delicious cup of hot cocoa that is way better and more awesome than any store bought version!

    I know that what I do probably adds more carbs than the original count, especially since I usually put whipped cream another 2 or 3 times after I finish the first, but to me it's worth it, because I'm able to enjoy something hot and warm without feeling deprived or like I'm drinking "imitation" hot chocolate XD

    And this way I'm full for a while and end up not eating as much. So in a way, this is my bullet proof coffee :)

    This stuff tasted nasty... I bought cocoa powder like everyone said, and it tasted so bitter and awful. Not even trying to whip the heavy cream helped.

    Absolutely love this, made it with raw organic cacao powder, added a touch of sweetener, a few chocolate chips that are sweetened with erythritol and stevia, and added some coconut creme. Gave me a nice buzz too! Cocoa powder is just cacao powder roasted at high temperatures, seems like the organic raw version would be much healthier. If too bitter just add a little zero glycemic sweeter of your choice.

    I loved this too the only change I made was swapping out the water for coffee since coffee apparently helps bring out the chocolate flavour. I also think it didn't need any sweetener, but then I don't have sugar/sweetener in coffee. I think this will help switch up the bulletproof coffee and hopefully help satisfy my latte cravings (I really miss lattes).

    Try Droste cocoa powder. It's so much better than Hershey's. You can buy it online if your local stores don't carry it. (Droste is 100% Dutch processed cocoa powder made in the Netherlands.)

    Replaced half of the water by pure Soy Milk and added 3 Tablespoons Xucker Light (Erithryt) per serving.

    The sweetness was missing for me, and when I added Stevia, I didn't like the artificial taste. I think I could get used to this without the sweetness, since I am only just starting my keto journey.

    The quantity of cocoa powder must be wrong? Surely it's one TEASPOON and not one TABLESPOON? That adjusted it's a great night time drink. I gagged when making for the first time (thinking about the butter) but it is delicious. You can't actually taste it but it adds a wonderful 'creaminess' to the drink. Should be made in a blender (Magic Bullet or similar) to get the thick creamy froth. It's not going to taste as good made in a saucepan. Done properly this is a really good hot chocolate. Add a dollop of whipped cream or some of the carb free syrups work really well in it too :)

    This made all the difference for me this evening. I tweaked it by adding one packet of stevia. I also didn't have any vanilla. Next time I made add vanilla and I will add another packet of stevia.

    I just microwave 1 square very dark chocolate (86%) with a small amount of heavy cream in a demitasse. Stir for a minute to really blend. It's almost Parisian

    Tried this tonight after 2 weeks into Keto.. my mind was waiting for a typical hit chocolate flavour so was slightly disappointed. I added extra vanilla but I find the more you drink the more enjoyable it is. Also, if you are use to a lot of sugar this won’t taste the best but the less and less you are having sugar the more you will enjoy this. Changing the taste buds :)

    An improved recipe :

    2 tbs of pure Cacao powder - it is bitter
    1 square of 70% chocolate
    dense coconut milk and water
    1/4 salt
    1 tsp vanilla extract
    add sweeteners if you don't like it so bitter. I add some pure raw honey at the end which is metabolized better than any other sweetener.

    STEPS:

    1. turn on the heat to max and heat a pot.
    2. lower the heat and add the coconut cream/milk with water for a cup
    3. take a whisk and whisk it non stop.
    4. When you start seeing bubbles, add the cocoa, the salt and the vanilla.
    5. whisk vigorously for 1 minute then turn off the heat and serve.
    Be careful it is extremely hot.

    For your friends that are not on diet, they would love this cocoa if you add 2 tbs of sugar and replace coconut milk with normal milk.

    ahhh this one was a favorite from my old days....!!!! Now we stick to keto ;)

    I switched to drinking coffee to Good Earth Herbal Sweet and Spicy Tea. Sweet fix! All natural..Health Food Store..I lost 20 pounds in 1 month..and I still eat my friut.

    There's a problem with the recipe, or the multiplier. It states for 1 serving to use 1/6 oz. butter. However, every other serving size is approximately 1 oz. per serving. Clearly a mistake at 1 serving.

    As Jason said, there is a problem with the multiplier, but it might have to do with the algorithm converting from metric to Imperial and not simple multiplication. Everything looks right in metric; only the Imperial single serving is incorrect on the amount of butter.

    No, the metric version is correct. It should be around 1 oz.

    I was very happy with this recipe. I needed a chocolate fix, Valentines day i was very tempted to eat some non keto chocolates. This really hit the spot. Even though I didn't have vanilla, and I used salted butter, bc that is all i had. This came out great. Definitely going into my normal rotation of recipes.
