Ingredients

  • 2 tbsp 2 tbsp avocado oil or olive oil
  • 1½ lbs 650 g boneless chicken thighs
  • salt and pepper
  • 8 oz. (3¼ cups) 230 g (800 ml) baby bella mushrooms, sliced
  • 4 4 garlic clove, mincedgarlic cloves, minced
  • 1½ cups 350 ml heavy whipping cream
  • ½ cup (113 oz.) 120 ml (40 g) shredded Parmesan cheese
  • 1 tsp 1 tsp fresh parsley

Instructions

  1. Over medium heat, in a large skillet, warm the avocado oil. Season the chicken thighs with salt and pepper. Fry in the skillet, until browned and cooked through; remove chicken to a plate with a slotted spoon, reserving juices in the pan.
  2. Add garlic to the frying pan and stir-fry until soft; add mushrooms and sauté until softened, for about 5-7 minutes.
  3. Over medium-low heat, add heavy cream, stirring well. Allow to simmer for about 10 minutes stirring often. Stir in parmesan cheese until melted. Add additional salt and pepper to taste.
  4. Add chicken back into skillet and coat with sauce. Serve garnished with parsley.

Serving suggestions

Serve with a fresh side salad or steamed low carb vegetables like broccoli, spinach, or asparagus.

Tips

While chicken thighs are flavorful and satiating because of their higher fat content, feel free to make the dish with chicken breasts (preferably skin on) or chicken drumsticks, or a mix of both. You can also substitute pork chops or slices of pork tenderloin.

    I made this with chicken breasts because I was unable to get thighs. It was very tasty and appealing. Quite easy to make. Turned out like an Alfredo sauce almost.

    This is so amazing! This recipe will be made over and over again in our house. So creamy and flavorful! Helps to salt the mushrooms right away so that they cook down and it makes it easier to scrap the yummy stuff off the bottom of the pan. I did reduce the cream to 3/4 cup. And used 4 thighs. Ummmmm!

    OMG!! Yummmmmy. The only thing missing was a couple of slices of french bread to sope up all that creamy sauce (just kidding!!) I actually used a spoon to get every little bit of the sauce. This was great. I will be making this every week. It was delicious and filling. It was also super easy and a quick week night meal.

    That depends on a couple of factors. If you made this recipe as written and used 8 chicken thighs or breasts, then a serving would be 2 pieces since this makes 4 servings total. As for the sauce, it wouldn't be helpful to give a volume size as the sauce will cook down differently for each person who makes it.

    We have not tested this recipe with coconut milk. Canned coconut cream may work well as a non dairy option. It tends to be higher fat than the coconut milk which would likely be too thin a liquid for this dish.

    We LOVED the sauce! It's ridiculously good. The only downside is that the servings are small. When I gave it to my husband, and he saw that dinner was 1.5 thighs - it just looked tiny.

    I'm in complete agreement with earlier post regarding macronutrients. Not only macros, but calories are equally important. Too many calories equals actual weight gain, and I think some people do not realize calorie counting is critical to weight loss. With all the computer technology utilized to set up this website, I think you have missed a critical tool. It is most likely going to be a no go for me when it's time to pay for this.

    Had this last night and it was fab. I did change a few things though: used 3 chicken breasts chopped up for 2 of us, added chopped leeks with the mushrooms and ( crucially) added low fat crime fraiche and a spoonful of cream cheese instead of the full fat cream) Also simmered it for much longer to reduce sauce and intensify flavour. Served with steamed asparagus. An gorgeous- very satisfying and served 2 inc v large hub!! Will defo make again

    So yummy. I was so full it hurt. Can’t eat like this all the time cause I was over on calories for today, but it sure makes keto a little easier to have an indulgent meal in a Friday night.

    This was a great meal! I think that it is really important to make sure you brown your chicken in the pan and that there are 'bits and pieces' of the chicken used to make the cream mixture. I was able to scrape up all the small pieces of chicken while the mushrooms were cooking. I believe this made the flavor really, really fantastic. Enjoy!

    I love this recipe. I've made it several times, but I would just point out that according to the nutrition labels on the ingredients I used this recipe would have double the carbs per serving than what's listed here.

    This was super tasty. I used double cream which was thick. So yummy and filling. First I thought the portion was too small but it was super filling. I will try it next with single cream to see what the sauce consistency will be. For some reason, I found it sweet, so odd.

    We made this recipe with skinless thighs, but you can certainly use skin on if you prefer!

    Delicious! We actually don’t mind the flavor of mushrooms but really dislike the texture. SO, once they were simmered in the cream, I blended them in my Vitamix! The only addition I made was a bit of dill to make a little more like stroganoff. Yummy and oh so easy. Thanks!

    If the meal doesn't satisfy your hunger, you may need to increase your portion while being mindful of the carb level to which you're eating.

One of the lovely things about the Diet Doctor recipes is the ability to make adjustments in number of servings to make it work for you.

    This was absolutely delicious! I only added a little bone broth when I put the garlic and mushrooms in to help scrap up the fond off the bottom of the pot. Makes it a little easier. So yummy, I wanted to drink the sauce up and the chicken was super tender.

    Great recipe. Added a can of quartered artichoke hearts which my kids like (they don't care for mushrooms but do like the flavor of the finished sauce). The artichokes and mushrooms are great together and add a bit of depth of flavor.
