Ingredients

Cauliflower slaw
  • 1 lb 450 g cauliflower
  • ½ cup 120 ml sour cream
  • ¼ cup 60 ml mayonnaise
  • 1 tbsp 1 tbsp Dijon mustard
  • 1 1 garlic clove, mincedgarlic cloves, minced
  • 1 tsp 1 tsp fennel seeds or dried dill
  • salt and ground black pepper
Meatballs
  • 1½ lbs 650 g ground beef or ground turkey
  • 1 (4 oz.) 1 (110 g) yellow onion, finely choppedyellow onions, finely chopped
  • ½ cup (113 oz.) 120 ml (40 g) shredded Parmesan cheese
  • 1 tbsp 1 tbsp tomato paste
  • 1 tbsp 1 tbsp Italian seasoning
  • 1 1 garlic clove, mincedgarlic cloves, minced
  • salt and pepper
  • 1 tbsp 1 tbsp butter, melted
  • 2 oz. (½ cup) 55 g (120 ml) cheddar cheese, sliced

Instructions

Meatballs

  1. Preheat the oven to 430°F (225°C)
  2. Mix all the ingredients for the meatballs, except the cheddar cheese. Combine well.
  3. Grease a muffin tray with butter. Divide the meat equally and roll into balls, placing in muffin wells. Bake in the oven for 15 minutes.
  4. Remove meatballs from oven and top with cheddar slices. Bake for another 5 minutes.
  5. Cauliflower Slaw

  6. Chop the cauliflower into chunks, then slice thinly, preferably with a mandolin or a food processor. The thinner the better.
  7. In a large bowl, combine the rest of the ingredients for the cauliflower slaw. Add the cauliflower and mix well.

    Thank you for this recipe; I am hoping to use these meatballs as enticing snacks for my seriously underweight, diabetic husband who has no appetite.

    This was very good. I had doubled the recipe so we would have leftovers. Used 1 lb. ground beef, 1 lb. ground pork and added 2 eggs because the mix seemed dry. Cooked in an air fryer and the outsides were crispy with juicy meat inside. Thanks for recipe!

    my husband made this but misread cauliflower for cabbage (it was quite wet, like KFC) - how many more carbs would it be made with cabbage? he ended up adding a large floret of cauliflower to soak up the juices
