Ingredients

  • 8 oz. (1 cup) 230 g (240 ml) cream cheese
  • ½ cup 120 ml heavy whipping cream
  • 3 tbsp 3 tbsp lemon juice
  • ¼ tsp ¼ tsp salt
  • 2 tsp 2 tsp pure vanilla extract
  • 13 cup (1½ oz.) 80 ml (45 g) powdered erythritol
Garnish
  • ½ cup 120 ml fresh blackberries (optional)
  • 1 tsp 1 tsp lemon zestlemons zest (optional)

Instructions

Instructions are for 4 servings. Please modify as needed.

  1. Use a hand mixer to whip the cream cheese and heavy cream until smooth and fluffy.
  2. Add the lemon juice, vanilla, and salt. If you prefer a sweeter taste, add some erythritol. Continue whipping until well mixed and smooth.
  3. Refrigerate for 30 minutes before serving.

    Full nutrition??? Why does it list "net" carbs then? PLEASE list total carbs and let US decide if we want to deduct anything!

    BTW, this tastes very good. Delicious springtime dessert.

    I just made a double batch of this (8 servings) that I was planning to serve with fresh berries on Easter. In my opinion, the recipe calls for way too much salt. I used 1/2 teaspoon kosher salt for the double batch, and all I can taste is the salt. I added more lemon juice and a lot more zest, which helped, but I'm afraid I'm going have to make a new batch and toss the salty one. What a waste of ingredients. I recommend starting with a pinch of salt, tasting the mixture, then adding more if you think it needs it. It seems like this would be very good if it wasn't overpowered by salt.

    This is a good recipe. I made it for Easter using the two serving option. I did add more lemon juice, Swerve and zest than the recipe called for because it did not taste lemony and it lack the sweetness to balance out the cream cheese which was all I was tasting. I used an electric beater. As suggested above it would be wise to taste as you are preparing it. Everyone's palette is different. Preparing it a day ahead will give it time for all the flavors to meld together. I am going to serve it with strawberries.

    This is very delicious but I added more sweetener( 1/4 t. stevia + xylitol) until is was sweet enough.

    I’ve been making a version of this with almond extract instead of vanilla. It reminds me of my mom’s cheesecake. Sometimes I add the lemon juice, sometimes I don’t... either way, it’s a great dessert for times I get a sweet tooth.

    where and what is a good brand of liquid erythritol? I've got Swerve but haven't seen a liquid erythritol.

    Tastes great however non keto husband needed sugar to make it palatable. Think us ketoers are used to the far less sweeter flavours. Just be mindful if you plan to serve this to non ketoers. Great texture!!

    I totally agree with you about the salt. Unfortunately, I made the recipe before I read the comments. To me, the mousse was almost inedible. It might have been the combination of the lemon juice and the salt. It almost tasted like some kind of bathroom cleaner might. Very disappointed.

    The basic recipe idea isn't bad, but next time I'll either add raspberries or cocoa powder instead of the lemon and salt.

    I left the salt out completely. I like a little bit more lemon taste so I used 2 lemons and added the zest as well sweetened it a tad with blackberries. Super yummy dessert! Thank you.

    I think that if you want to know your total carbs, then look at your ingredients. It’s pretty easy to figure out.

    it was too salty. tried extra Swerve, lemon juice, vanilla, nope. it’s hard for me to throw out anything. I couldn’t even let the dog have it because of the Swerve.

    Absolutely love this dessert!! For myself, I do add some erythritol. Kristie's lemon cheesecake fluff has become a staple treat for me. When I make it, I actually divide the dessert into four small mason jars and pop them into the freezer. When I want a dessert, I take one jar out of the freezer, let it thaw for about half an hour (when I can wait that long!) and then enjoy this wonderful frozen treat! I tend to eat my food too fast so this slows me down so I can make it last longer!

    I really liked this dessert - to my surprise. I was expecting to miss sweetness, but I didn't , and I didn't add any sweetener. I liked the salt too, surprisingly. But I think it's good advice above to start with just a sprinkle and add more if it's to your taste.
    I do a version of this with cream cheese, whipped double cream, a tablespoon of cold brewed coffee, vanilla, toasted flaked almonds, and sometimes as a special treat, 1 square of 85% chocolate grated in. Another recipe where sugar can go take a run and jump.

    This was my first Keto dessert. I loved it! Adding berries and nuts made it filling. I used a small cup instead to serve so wouldn’t go over total carbs for the day.

    I just made this and it is delicious! I used 4 tbsp of bottled lemon juice and a couple pinches of Himalayan salt with a quick squirt of liquid Splenda. Amazing! I also used my awesome Sunbeam hand mixer which quickly rendered the cream cheese smooth and lump free.

    I really loved this recipe. I made one serving without sweetener and thought it was good. Made a second serving with Swerve confectioners sugar and really loved that one. Mine had a tangy lemon flavor and wasn't overly salty at all, as others seemed to experience. This is a keeper recipe for me.

    Allison the Lady above said she splits a batch into 4 and puts in Mason Jars, and puts into Freezer, and takes out, 30 minutes and eats she loves it, hope this answer your question bye

    I add a little more lemon and zest. Tastes great frozen with blackberries. Only add a small pinch of sea salt. It brings out the flavors. Sweetness intensifys the longer it sits so don’t add too much sweetener. Great treat.

    This is such a wonderful treat! I eat mine without erythritol and love it! My husband prefers his with the erythritol. I wonder if using a lime would be like a key lime cheesecake fluff? Thank you for this recipe! Yum!

    The friend who introduced me to this website shared this recipe before I became addicted to Diet Doctor. :-) Her modifications are 2 T. vanilla extract, 2 T. Xylitol, juice of 1 whole lemon. While I was still hooked on sugar, I increased the sweetener to 3-4 T., but now I only use the 2 T. I add the lemon zest from the whole lemon right to the mixture and have even started adding unsweetened coconut. I've never made it as far as garnishing each serving because I tend to walk by the refrigerator and scoop up a finger full. Unbelievably good. Thank you Diet Doctor.

    I really like this recipe. I did read previous comments and only used a dash (or very small pinch) of salt. I ran low on swerve confectioners so I put some stevia in my coffee/herb grinder to add more and that worked very well. I used about a tablespoon more of cream to make it a little more creamier. Overall, one of the better tasting cheesecake like recipes.

    I love this recipe and make it all the time. As someone else posted, I put the fluff into little 4 oz. Mason jars, and lid them. I tuck a jar into my brown bag lunch every day for a little not-too-sweet treat. Heavenly! I find that I don't need the salt, and I sweeten with a little stevia.

    As the garnish is listed as being optional, it is not included in the carb count.
