Ingredients

  • 1 1 medium unripe bananamedium unripe bananas
  • 4 4 eggeggs
  • ยพ cup (3 oz.) 180 ml (85 g) almond flour
  • ยพ cup 180 ml coconut milk
  • 1 tbsp 1 tbsp ground psyllium husk powder
  • 1 pinch 1 pinch salt
  • 1 tsp 1 tsp baking powder
  • ยฝ tsp ยฝ tsp vanilla extract
  • 1 tsp 1 tsp ground cinnamon
  • 2 tbsp 2 tbsp coconut oil or butter, for frying
This recipe has been added to the shopping list.

Instructions

  1. Mix all of the ingredients together and let sit for a while.
  2. Make in a waffle maker or fry in a frying pan with coconut oil or butter.
  3. Serve with hazelnut spread or whipped coconut cream and some fresh berries, or just have them as is with melted butter. You can't go wrong!

Tips

Got extra ripe bananas? Make more waffles and freeze the leftovers for a quick and easy future morning. Wrap each pancake individually in plastic wrap for easy defrosting.

Here's how to whip coconut cream. Let a can of coconut milk sit in the refrigerator for at least 4 hours to separate the cream from the water. Open the can carefully and remove the cream part with a spoon. Place in a bowl and whisk with a hand blender for a few minutes. Save the coconut water for use in smoothies!

    Can these be made into pancakes instead of waffles? I'm assuming "yes" and will try it, but am wondering if there are any modifications to the recipe that would make them better. I've made a pumpkin pancake with some banana, before, that is outstanding. I'm excited to try these and bought some psyllium husk powder from Thrive.com.

    You would like to do the banana waffles without bananas?! ;-)

    I haven't done the recipe but I guess except for taste bananas add some sweetness...but my guess is that you can do them without bananas and that will actually mean that you skip a lot of carbs. :)

    Just made these and they are surprisingly tasty. The banana is what brings out the sweetness and because of that I dont think you need any sweetener. I love pancakes and now with this recipe I can have them!

    These are fantastic! I love love love them. I make them as pancakes instead of waffles. I make the batter ahead of time and keep it in the fridge and make them each day.

    My waffles stuck to the non-stick waffle iron. I followed directions and even greased my iron well before use. How long is a while for letting the batter sit? I let it sit for about 15 minutes. Maybe that was my problem? They taste good but just not a good consistency for my waffle iron.

    This recipe was too dry. The batter looked like cement. I added almond milk to lighten it up and made muffins instead. Will not try this again. Syd was not happy with this.

    Made it EXACTLY as recipe calls for . DOESN'T WORK in waffle iron , it is like soft rubber when you try to get it out . Doesn't keep it's shape . So I will cook it in a frying pan . Batter is very THIN , NOT
    like a pancake mixture .

    These are DELICIOUS! I made a few small changes. I made the recipe for one pancake in a non - stick pan with a tbsp of butter. For the batter, I used a whole egg instead of a 1/2 and omitted the banana. Also, I took a square of 80% chocolate (< 1 carb), broke it into small pieces and added it to the batter. The batter was the right consistency within a minute. Fried it up and served with a tbsp of peanut butter. I could 100 more of these! Incredibly tasty.

    Hi Stacey , You can find psyllium husk in health food stores.
    Some people have used chai seeds in stead.

    I found that getting the skillet hot with butter before pouring the batter in helps. Use lots of butter!

    I love these and have made them a lot. But I've learned by making a few flops. My waffle iron needs to be at its highest setting and they need to cook heaps longer than just when the ' ready' light goes on. Maybe 2 or 3 x longer?
    I carefully run a knife around the edge to loosen, then with the knife tip,I ease some of it away from the iron, then gently, bit by bit ,ease a large spatula under it till it is as close as possible, supporting half of the waffle. Then I flip it over in half. Now it seems to be stable enough to remove from the iron, while it is folded in half. When plated, you can flip it into a circle again. And yes. Oil the Iron well. Hope this helps.

    Actually. I just left one in far too long.....10 or 15 minutes, while I was doing the previous post, and it's great!!! Lifts out of the iron like a doddle ( just took it out with my fingers ) and is crispy in parts and really brown( read.... Not Burnt) and yummy. And looks good too. Go figure ;)

    Love those waffels I also use as pancakes as well. I use loads of coconut oil on the Waffel Iron that is very hot. The waffwels come out perfect yum

    On my waffle iron, it really has been a mess. I have not tried to leave them for 15 mins to see if it's better , but since I doubled the recipe to freeze one made, it would have taken too long... So I chose to make pancakes... There are absolutely delicious ! I'll freeze them on a rack, then pack them according to what is allowed for one person so I won't be tempted to eat more :) !

    Love this recipe but I canโ€™t get the number of servings out of it. I froze the bananas and thawed them so they were mush. I put 1/2 cup in waffle maker and it almost makes a complete waffle. A double batch only made 10 instead of 16. I let the batter sit for 15 minutes hoping it would โ€œgrowโ€. :). Any thoughts?

    A whole banana is in a recipe for 8 servings. If you only have 1 serving, it's an eighth of a banana, about 3.5 carbs, if a whole banana is 27.

    You could possibly try adding banana extract for the flavor without the carbs, maybe cut back on the liquid used enough to compensate for the few drops of extract used

    They really aren't. A small banana that weighs 118 grams has 105 calories and 91% of those calories are sugar and starch. The starch content is specifically 35% of the calories. But when you divide it into 8 servings, the calories come down to 13 calories and 91% of that is still 11.83 calories of sugar and starch for each pancake so it means the sugars are 11.83 calories of sugar/starch in each pancake. But the suggestion to add banana extract if you're really hooked on banana flavor makes more sense than adding high sugar and starchy foods like a small banana. The starch always immediately turns to blood sugar as soon as it hits the amylase enzyme in our saliva. Research shows it takes a 50 mg/dL of fasting blood sugar to 100 mg/dL or doubled in 15 minutes and takes it to 250 mg/dl in 30 minutes. STARCH is the enemy of weight loss and general health because high blood sugars damage every single cell in the body and has been identified as the cause of Alzheimer's Disease.
