Low carb beef skewers with grilled onions
Spicy ground beef on a skewer. Popular in many countries because it's affordable and easy. It's also low carb and delicious. Try this inspired version, seasoned with a blend of unique spices. Cilantro lovers in your family may even leave a tip!

Ingredients
- 1¼ lbs 550 g ground beef or ground lamb or ground turkey
- 1 tsp 1 tsp coriander seed
- 1 tsp 1 tsp yellow mustard seeds
- ½ tsp ½ tsp turmeric
- ¼ tsp ¼ tsp ground black pepper
- 2 tsp 2 tsp sea salt
- ½ cup (¼ oz.) 120 ml (8 g) chopped fresh cilantro
- 2 tbsp 2 tbsp cold water
- 1 tbsp 1 tbsp olive oil
Grilled fresh onion
- 1 lb (2¾ cups) 450 g (650 ml) fresh yellow onion in a bundlefresh yellow onions in a bundle
- 2 tbsp 2 tbsp olive oil
- 2 tbsp 2 tbsp lemon juice
- salt and pepper
Tomato and almond pesto
- 7 oz. (¾ cup) 200 g (200 ml) canned whole tomatoes
- 2 oz. (61⁄3 tbsp) 55 g (90 ml) blanched almonds
- 1 tbsp 1 tbsp sesame seeds
- 1 - 2 1 - 2 garlic clovegarlic cloves
- 1 tbsp 1 tbsp red wine vinegar
- ½ tsp ½ tsp salt
- ¼ tsp ¼ tsp ground black pepper
- ¼ cup 60 ml olive oil

Making low carb simple
Instructions
- Mix the spices with salt and pepper and work into the ground beef.
- Add finely chopped cilantro and water. Mix well.
- Shape into two oblong patties per serving and mount on skewers. Brush with oil. You can either grill, pan-fry, or use the oven to cook the beef. Regardless of method, be sure to turn the skewers at least once during cooking.
- If you chose to cook them in the oven, preheat to 400°F (200°C), or use the broiler setting. Cook the skewers for about 20 minutes or until the meat is cooked to your liking.
- Serve with grilled fresh onion and tomato and almond pesto.
Grilled fresh onion
- The onions can be cooked either in the oven or on a grill. The results are slightly different but equally tasty.
- Preheat the oven to 400°F (200°C). Split the onions lengthwise and place in a baking dish.
- Drizzle oil and lemon juice on top and season to taste. Roast in the oven for 20 minutes or until the onion is soft and is nicely browned. Preferably, turn the broiler setting on for a couple of minutes towards the end.
- If the onions are going to be cooked on the grill, slice them in half lengthwise and brush with a mixture of the oil and lemon juice. Season with salt and pepper.
- Grill for 10-15 minutes depending on size, turning occasionally.
Tomato and almond pesto
- Drain the tomatoes.
- Puree tomatoes with the other ingredients using a blender or a food processor.
- Add oil towards the end.
- Serve directly and store in the fridge afterward. It will keep for at least a week. You can also freeze it.
Tip!
Soak the skewers in water for about an hour before using. This reduces the chance of a skewer igniting on the grill!
