These low carb blueberry pancakes are so easy to whip up that you can sit back and relax, this delicious brunch will basically take care of itself. Serve with whipped cream and enjoy with the whole family!

Ingredients

  • 6 6 eggeggs
  • 4 oz. (ยฝ cup) 110 g (110 ml) cream cheese
  • 3 oz. 85 g melted butter
  • 2โ„3 cup (22โ„3 oz.) 160 ml (75 g) almond flour
  • 2โ„3 cup (2ยฝ oz.) 160 ml (70 g) oat fiber
  • 2 tsp 2 tsp baking powder
  • ยฝ ยฝ lemon, the zestlemons, the zest
  • 1 pinch 1 pinch salt (optional)
  • 3 oz. (91โ„3 tbsp) 85 g (140 ml) fresh blueberries
This recipe has been added to the shopping list.

Instructions

  1. In a bowl, whisk together eggs, cream cheese and melted butter.
  2. Mix the rest of the ingredients separately, except blueberries, and then pour into the egg mixture. Combine well until you get a smooth batter. Let rest for a few minutes.
  3. Fry the pancakes over medium heat in a small nonstick pan or cast-iron pan. Use around โ…“ cup (0.75 dl) batter per pancake.
  4. Fry for a few minutes and gently add some blueberries, without pressing them down too hard. Flip and fry for a few more minutes.
  5. Serve with whipped cream or browned butter.

    Psyllium will act completely differently in baked goods. You can try using 1/2 the amount of coconut flour, but it will affect texture and carb count.

    Is oat bran the same as oat fiber?

    Oat bran and oat fiber are completely different. Oat fiber is the pulverized outer hull, it's not part of the grain itself at all. It's 100% completely insoluble. Since it's not digested it will not affect blood sugar.

    Kristin, if you are in the USA, oat fiber can be sourced from Netrition or Amazon. It's a niche product not frequently available in stores. If you are not in the USA, you may be able to get it from iHerb.

    Cassava flour is extremely high carb. For baking some people see good results using sesame seed flour in place of almond flour. A 1:1 ratio should work!

    Tracey, Netrition sells it for $3.99 a lb vs Amazon price of $13.43 a lb. Even with shipping, it ends up being about $3 less from Netrition. :)

    Love these pancakes, will definitely be a favourite. I didnโ€™t have oat bran substituted 2 tbls of psyllium husk and they turned out great and fluffy. Many thanks for the recipe.

    I made these this morning for my kids. I used 1/3 c of coconut flower instead of the oat fiber and they turned out great. They taste a little bit like cream puffs. My 8 year old loved them and even said "Mom, thanks for making me have wonderful childhood memories! I love these pancakes!" :D

    These are delicious but how are the measurements being translated? I usually go by Gramm but 75g of oat fiber was way to much and a lot more than 3/4 cup. Ended up winging it and adding lots of cream.

    the batter I made came out very thick and does not pour like regular pancake batter. Am I missing a liquid ingredient that is meant to soften the ingredients

    I made these without any Oat fiber I just used 1 cup of Almond flour and cooked them on low heat and they came out great.

    These are the best low carb pancakes I've made! The texture is fantastic. I skipped the blueberries and lemon zest and added 1/3 cup erythritol and 1 tsp vanilla extract. Delicious!

    Unfortunately there is not a good substitute for oat fiber. You may prefer one of our other pancake recipes.

    The measurements are wrong on the App, used 75ml of almond flour and 75ml of psylium husk. The batter was more like cookie dough so added about 200ml of water. Iโ€™m suprised they actually turned out right.

    I made these last week and wanted to like them, but wasn't impressed. I had tried them with some whipped cream on top and they seemed bland and lacking something. I made extra and so I put them in the freezer for another day just to give it another try. Tonight I heated a couple of them up in the microwave and topped them with butter, some chopped pecans, and a drizzle of stevia syrup. Now they are perfect. Reminded me of the multi-grain pecan pancakes I used to enjoy at Cracker Barrel! Delish.

    INGREDIENTS
    1 cup almond flour

    1/4 cup coconut flour

    2 tablespoons low-calorie natural sweetener

    1 teaspoon salt

    1 teaspoon baking powder

    1/2 teaspoon ground cinnamon (optional)

    6 eggs, at room temperature

    1/4 cup heavy whipping cream, at room temperature

    2 tablespoons butter, melted

    1 teaspoon vanilla extract
