Ingredients

  • ยฝ cup 120 ml coconut cream
  • 2 oz. 55 g fresh strawberries
  • 1 tsp 1 tsp vanilla extract

Instructions

  1. Mix all ingredients using an immersion blender.

Tip from our Dietitian

If enjoying this coconut cream for breakfast we recommend increasing the protein for a more filling and nutritious meal.

If you tolerate dairy, add 2 tbsp whey protein isolate per serving. Add some water for a runnier consistency if needed.

If you don't eat dairy products, eat a couple of eggs on the side.

    I like to mash up a ripe avocado and mix in some whole fat greek yogurt. I then usually add some nuts ( I usually use walnuts) and some type of berries. Coconut flakes are added if available. This is a good way to get the nutritional benefits of avocadoes for someone who make not necessarily like the taste.

    I make actual coconut yoghurt by mixing a couple of tins of coconut milk with live yoghurt culture. I leave it overnight in my Easiyo yoghurt maker. It's soooo good!!!
    It's not thick like normal yogurt but tastes absolutely amazing! Only slightly coconuty with a fresh yoghurt tang. I just drink it with a little stevia.
    I'd love to know if the live cultures reduce the sugars in the coconut milk as the live bacteria "eat" it. Any one know?

    I made sure I used coconut cream. It was super runny. I had to drink it. It was tasty though.

    The information I can find says that there's 7gm of carbs in 100ml of coconut cream. Where did the 88gm of carbs in cocnut cream come from?
    The link you ve added states that there 16gm in 240ml of coconut cream. Am I reading the page wrongly?

    I like your suggestion! I miss the cold crunch of breakfast cereal. This sounds like it would hit the spot or at least be a great alternative finally! I'm not a fan of the avacado but I WANT to be. Also, I'm so sick of eggs! I've never been big on their texture. Thank you for sharing your recipe!!!

    Not buying the right kind of coconut cream. I did that and was like whoops. Got the right kind and now I have it in the freezer to see how it'll taste!!! :)

    What I don't understand is the 20g strawberry - that isn't a whole strawberry! Mine are 35g or about.

    My coconut cream (Marks & Spencer) is 3g carbs per 100ml.

    I made this tonight with coconut milk. It was good, but we decided to see if it would be better chilled. DEFINITELY better chilled. I added the coconut oil for fat, but I don't think I will add a tbsp next time.

    I'm in Australia where coconut cream is sold in 270ml cans by any grocery chain (Woolworths, Coles etc) - brand name 'Ayam'.

    Hi I'm dairy intolerant so I have alpro simply plain soya yoghurt. It has 1.1 net carbs per 100g and 4g of protein. It's really nice mixed with Chia seeds nuts and a few berries

    I whipp the coconut cream and it thickens quite well. Using an electric Beater. Yes Ayam Coconut cream is the only brand I prefer for proper coconut and its flavour. You can get light coconut cream but its organic in Ayam brand at Woolworths in Australia.

    I think you should say that the cream has to be whipped; I have learned from experience that if you don't whip it or use it for making yogurt, it will be thin and runny

    I made this with the cream part of the coconut cream had enough for 1 cup or two servings from one can; it was on the shelf in my closet and it was perfect. I used blackberries for this and it was a quick fix for a yogurt . For those who want the best THAI Coconut cream unsweetened is perfect; I just removed the water in the bottom of the can. thanks for this.

    Coconut cream will have natural sugars. Make sure there is no added sugars in the ingredient list.

    I bought coconut cream, the label shows 19g carb per serving , the can total ounces is 15oz, if I blend 1/2 cup = 7.5 oz x 19 grams = 142 grams of Carb just the cream plus 20grs the strawberry, isnโ€™t go over the low carb diet plan that states Carb consumption less than 20grs per day?

    Different brands of coconut cream have different carb counts. It's important to check ingredient and nutrition labels to find the lowest carb option your store offers.

    Chia seeds are a low net carb food. We have not tested this recipe with chia added.

    Great simple healthy recipe - thanks! I made it the top layer of a raw blueberry slice (added a dash of coconut oil). I made a cacao, nut and seed base with coconut oil. Froze the the lot and itโ€™s great!
