Ingredients

  • 13 cup (1¾ oz.) 80 ml (50 g) ground psyllium husk powder
  • 1¼ cups (5 oz.) 300 ml (140 g) almond flour
  • 2 tsp 2 tsp baking powder
  • 1 tsp 1 tsp sea salt
  • 1 cup 240 ml water
  • 2 tsp 2 tsp cider vinegar
  • 3 3 egg whiteegg whites
  • 2 tbsp 2 tbsp sesame seeds (optional)

Instructions

Instructions are for 6 servings. Please modify as needed.

  1. Preheat the oven to 350°F (175°C).
  2. Mix the dry ingredients in a large bowl. Bring the water to a boil.
  3. Add vinegar and egg whites to the dry ingredients and combine well. Add boiling water while beating with a hand mixer for about 30 seconds. Don't over-mix the dough, the consistency should resemble Play-Doh.
  4. Moisten hands with a little olive oil and shape dough into 6 separate rolls. Place on a greased baking sheet. Top with optional sesame seeds.
  5. Bake on a lower rack in the oven for 50-60 minutes, depending on the size of your bread rolls. They're done when you hear a hollow sound when tapping the bottom of the bun.
  6. Serve with toppings of your choice.

How many carbs does the keto bread contain?

The keto bread contains 3 net carbs per bun (a similar bun of regular bread may contain about 20 grams of carbs). This makes it a decent option on a ketogenic diet. Expand the nutrition tab above for the full nutrition facts.

Can I substitute ingredients?

In all baking, and especially in low-carb baking, the ingredients and amounts used are important. The eggs and ground psyllium husk are hard to replace in this recipe.

If you don't like almond flour or if you have an allergy, you can make this recipe with coconut flour instead. Substitute the amount of almond flour for a third as much of coconut flour and double the number of egg whites.

Flavor your bread with your favorite seasoning to make them perfect for whatever you're serving them with. You can use garlic powder, crushed caraway seeds, or homemade bread seasoning.

Why did my keto bread turn purple?

Do your buns end up with a slightly purple color? That can happen with some brands of psyllium husk. Try a different brand.

Is keto bread gluten-free?

The keto bread is 100% gluten-free, just like all of our keto and low carb recipes.

What do you do with the leftover egg yolks?

Customize your bread!

For a different look and some crunch, sprinkle seeds on the buns before you pop them into the oven – poppy seeds, sesame seeds, or why not some salt flakes and herbs?

This recipe is so versatile and can be used in a number of ways. You can easily turn it into hot dog buns, hamburger buns or garlic bread.

Why has the nutritional information changed?

The nutritional information in this recipe was based on a high-fiber almond flour that we realized was difficult to purchase in some areas of the world. We decided to update it with a more common almond flour that is slightly higher in carbs. That’s why the carb amount in the video does not match the nutritional information in the recipe.

We have also removed the butter from the ingredients list as it was not part of the bread but a topping. This is still a very low carb recipe, and you will most likely eat it with butter or another high fat spread. Therefore, it will still be a keto meal, which is why we've kept the name.

    My husband made this 'bread'...It really is something more like a stress ball. I tried to swallow a bite, but could not. I tried to give the rest of it to my dog (who eats everything). The dog refused to eat it, and walked away looking disgusted.

    Do you have good quality psyllium husk powder? It should absorb the water and add bulk to the dough but only if its good quality.

    Really liked these! Excellent toasted with butter from grass-fed cows. Next time I will make them flatter so I can use as a hamburger bun or a bunwhich.

    I had wonderful success with this recipe exactly as it is. I am astounded at the perfectly bready texture and smooth taste -- it's bread! I've been on a Keto diet now for a little over a month and I don't really miss the breads and pastas. Yet now with this bread I can enjoy the convenience of sandwiches, buns, and enjoy butter more!

    Well I am shocked! This bread is fantastic! It tastes so close to real bread I just can't believe it! I want to eat all 6 rolls - lol - then again I don't want to be in the bathroom all night! It was so super easy to make also! I made sure I bought fresh baking powder also. I will definitely be making these over and over again and in all different shapes! - and now I can bring it when I go to BBQ's and events where everyone else is enjoying rolls and bread! I will enjoy it too now!

    Let's just get it out there. I am not really a cook, I'm a much better cleaner upper after my husband cooks. However, I have been officially on the Keto wagon since January 2018 and lately really missing bread, so I decided to finally give this recipe a try and all I can say is WOW! Seriously, I am totally amazed! First because it was so easy to make. Second because the rolls turned out perfectly on my first try and third because they look and taste just like bread and that's awesome! I followed the recipe to the letter after watching the video at least 3 times trying to get motivated. I set the timer for 50 minutes and when it went off I took one roll out to check leaving the other 5 in for another 10 minutes. The difference between the two cooking times was very subtle, but I do think the outside of the 5 left in for the full 60 minutes did seem to be a little crustier on the outside and a little less moist on the inside. The texture on the inside is a bit rubbery but as they cooled they did firm up, I didn't mind it at all. The only down side, and I didn't mind this either, they were a very pretty shade of purple despite using an 'aluminum free' baking powder and NOW brand psyllium. Because the color doesn't bother me or affect the taste, I plan on using the NOW up then switching to the suggested brand in this recipe. So try this people and enjoy some bread again! If I could successfully make it believe me ANYBODY can do it!

    I don't understand how the calories are correct AT ALL. The almond flour is 80 calories for 2 TB....1.25 cups is 20 TB which is 1600 calories, divided by 6 is like 266 calories....add in the egg whites and psyllium and its a few more calories....way more than it's claiming.

    I tried this recipe twice now, second time with less mixing and less water and the buns still come out gooey and spongy, raw like on the outside. Any help would be appreciated.

    Followed the recipie, they came out great. Next time less salt, less egg white (99 grams liquide from a bottle), a bit more fiber. Usefull additionele to the menu, they make a great takeaway sandwichbun

    That's because you do not fold in the egg whites. You beat them in with the mixer, as shown in the video. This recipe is spot on.

    I love this bread. I add 1 1/2 tsp onion powder. Helps with any eggy taste. It is so versatile. Shaped some like hot dog buns so I could enjoy a hot dog without spiking my blood sugar. We make this regularly. Thanks you for t his fabulous recipe.

    The first time I made these I followed the directions for 6 servings exactly as posted. Not only were the middles still gooey after 70 mins in the oven, the "bread" was so salty I couldn't bring myself to eat it even if it weren't gooey. So for the second time I made some adjustments - 4 Tbsp of the psyllium hus powder, 2 egg whites, and about 1/4 tsp of salt. I also patted the rolls a teeny flatter, rather than just having round balls. 60 mins in the oven and they are PERFECT! It doesn't taste like saw dust, and the salt taste is very minimal. Is salt actually needed at all? Anyhoo, we put butter on them and they are delicious. Very happy!

    I just made this. I will say that I mixed it just as instructions stated, in the exact order it stated. When I poured the boiling water in, I mixed it up so that when I put in the egg whites, they would not cook with the boiling water. But then because the dough was already into a dough consistency, the egg whites did not incorporate well, leaving me with a bunch of clumps. :/
    I kneaded it until it incorporated better but I believe that over mixed it and left me with a rubbery bread after cooking :/
    Any suggestions on this would be appreciated!

    I messed up making it (didn't mix the dry ingredients together thoroughly and so the psyllium clumped up when I added the liquid ingredients. It didn't end up horrible, though, so I'm thinking that the next time I make this, it'll be even better. I wonder, though -- what if I wanted to make a loaf instead of rolls? How much time would it need in the oven?

    Well it seems like it either worked or it didn’t?!Perhaps use room temperature eggs and add after water, not to overdo with mixing. My rolls came out beautifully!!!! The only change I will make is bit less salt..

    Can i use substitutions for the psyllium husk? I made it exactly to the recipe and absolutely loved it but just wondering about switching it up, say flaxseed meal????or how about nutritional yeast for flavour ,or vital wheat gluten to help them rise a bit more or make a loaf of bread????? Anyone tried any of these???

    The recipe comes out perfectly without whipping the egg whites when I make it. I pour the egg whites and acv in the same container, dump with the water and mix.
