Ingredients

  • 13 cup (1¾ oz.) 80 ml (50 g) ground psyllium husk powder
  • 1¼ cups (5 oz.) 300 ml (140 g) almond flour
  • 2 tsp 2 tsp baking powder
  • 1 tsp 1 tsp sea salt
  • 1 cup 240 ml water
  • 2 tsp 2 tsp cider vinegar
  • 3 3 egg whiteegg whites
  • 2 tbsp 2 tbsp sesame seeds (optional)

Instructions

Instructions are for 6 servings. Please modify as needed.

  1. Preheat the oven to 350°F (175°C).
  2. Mix the dry ingredients in a large bowl. Bring the water to a boil.
  3. Add vinegar and egg whites to the dry ingredients and combine well. Add boiling water while beating with a hand mixer for about 30 seconds. Don't over-mix the dough, the consistency should resemble Play-Doh.
  4. Moisten hands with a little olive oil and shape dough into 6 separate rolls. Place on a greased baking sheet. Top with optional sesame seeds.
  5. Bake on a lower rack in the oven for 50-60 minutes, depending on the size of your bread rolls. They're done when you hear a hollow sound when tapping the bottom of the bun.
  6. Serve with toppings of your choice.

How many carbs does the keto bread contain?

The keto bread contains 3 net carbs per bun (a similar bun of regular bread may contain about 20 grams of carbs). This makes it a decent option on a ketogenic diet. Expand the nutrition tab above for the full nutrition facts.

Can I substitute ingredients?

In all baking, and especially in low-carb baking, the ingredients and amounts used are important. The eggs and ground psyllium husk are hard to replace in this recipe.

If you don't like almond flour or if you have an allergy, you can make this recipe with coconut flour instead. Substitute the amount of almond flour for a third as much of coconut flour and double the number of egg whites.

Flavor your bread with your favorite seasoning to make them perfect for whatever you're serving them with. You can use garlic powder, crushed caraway seeds, or homemade bread seasoning.

Why did my keto bread turn purple?

Do your buns end up with a slightly purple color? That can happen with some brands of psyllium husk. Try a different brand.

Is keto bread gluten-free?

The keto bread is 100% gluten-free, just like all of our keto and low carb recipes.

What do you do with the leftover egg yolks?

Customize your bread!

For a different look and some crunch, sprinkle seeds on the buns before you pop them into the oven – poppy seeds, sesame seeds, or why not some salt flakes and herbs?

This recipe is so versatile and can be used in a number of ways. You can easily turn it into hot dog buns, hamburger buns or garlic bread.

Why has the nutritional information changed?

The nutritional information in this recipe was based on a high-fiber almond flour that we realized was difficult to purchase in some areas of the world. We decided to update it with a more common almond flour that is slightly higher in carbs. That’s why the carb amount in the video does not match the nutritional information in the recipe.

We have also removed the butter from the ingredients list as it was not part of the bread but a topping. This is still a very low carb recipe, and you will most likely eat it with butter or another high fat spread. Therefore, it will still be a keto meal, which is why we've kept the name.

    Made these last night. Followed the recipe to a T and they turned out perfect! Don't over work the dough and don't over think the process. Just follow the instructions...and maybe make sure your oven is properly calibrated!Thank you, thank you for returning the occasional roll to my diet!

    I mixed all of my dry ingredients, stirred around to combine, then added the egg whites (beaten just to break them up a bit) and vinegar and tossed them around with the dry ingredients just as the water came to a boil. Pour the boiling water into the bowl containing all of the other ingredients with one hand while running the hand mixer on low speed in the other hand...little tricky but I didn't want the hot water cooking the eggs before I could get it all blended. Rolls came out perfect- trying them again tonight and hoping for the same results!

    You can't just use psyllium husks, if you do, they will be way too loose. I know because that's what I did the first time I made them. You have to grind the psyllium husks into psyllium powder, I use a blade coffee grinder. It took me about 6 1/2 tbsp of husks to get 5 tbsp of powder.

    This recipe will keep for a week or so in the refrigerator. Yes, it can be frozen as well.

Today this morning in fact I made my first keto bread. I followed the recipe but it seems like 1 cup of hot water was a bit too much instead of adding water slowly I just poured the whole cup of water in but the dough was a bit too wet, so I put in a half of coconut flour in to help dry up the dough a bit. Baked it at 170°C for 60 minutes. I put the tray on a cooling rack for half an hour. Scrumptuous! Yummy with butter and without butter. I had 1 1/2 bread and my craving for bread was more than satisying, wishing that I could eat more. I'm a happy woman and so will my son be also. My mum love's it. IS THERE A LIMIT OF EATING KETO BREAD??

    These are very high in fiber and too much fiber can be a problem!

    I read some time ago that this can happen if you over-mix dough containing psyllium husks.

    My bread feels abit wettish. Baked it for a good 60 minutes. Is this how it normally is ? Texture is abit rubbery.

    You can mix it by hand, you don't want to over mix the dough.

    Great rolls! Been making a double recipe (12 rolls) weekly, for a few months now, but changed it a little, no need to separate eggs; I use 4 whole eggs, only 7 tbsp of Psyllium powder, and 4 tbsp of ground flax (get some more Omega 3’s and helps with binding) everything else doubled. You won’t get an egg-y flavor and you won’t get the big air pocket, if you found either of these issues.

    Just made these for the first time. Followed directions exactly and used the psyllium powder from Amazon as suggested. Turned out perfect. Next time going to add some garlic powder and see how turns out. I am NOT a baker but have been forced to be one one to keep on my keto diet. One hint - add the boiling water last with the mixer ready to go...

    Made these yesterday and they turned out great. I live at 4,500 ft above sea level and made no adjustments but did omit the seeds. Will do again. I just smeared mine with butter - really good. They had a very slight purple color (my guess from the psyllium) but who cares - they are good.

    I dont think this bread is just 2 g of carb.

    How long can these be left out in room temperature? Maybe a week? When I made a batch and kept it in the fridge the texture was strange if I didn’t toast it. Does anyone just leave it out instead of refrigerating it?

    I made them last night. They turned out really good. I only had two eggs so I was shy one egg white but it was fine. I used Metamucil, the husk is ground to a fine powder. I also just mixed them by hand and not with a mixer. I am so happy to have "real bread".

    If made with coconut flour, this keto bread comes to less than 1 g of net carbs. (7.2 g of carbs, 6.3g of fiber). Just a thought. I guess it also all depends on the brand of flour you are using.

    Just made it RIGHT NOW. Got the psyllium husk from Trader Joe’s for really cheap like $7, and these guys turned out sooo good. Beat eaten when out of the oven, smear some delicious grass-fed butter on it like Kerrygold, and some oregano and parmesan cheese, pop it in your mouth and go to sleep for 3 days!

    White wine vinegar is much sweeter than cider vinegar and may not react the same way in baked goods.

    I made these yesterday since my sons are full keto and I am transitioning. My boys have lost about 23lbs each in 2 months and I in on week of transitioning to low carb list 6.5 pounds.
    They were hollow inside and a bit wet, but i just read i may have overmixed.

    My question is this, mine although looked beautiful on the outside, loved by my son, were salty....I will definutely make these again but will cut the salt in half or possibly leave it out completely.

    I will also mix by hand as I read here and see. But I love looking at these little rolls siting on the counter. I left them out and put them in a ziplock.

    Great simple recipe!! For the Keto vegans out there, I replaced egg whites with 5 tbsp aqua faba (Chickpea brine) and they turned out great! Rose up nice and fluffy :) I did end up with purple buns from my psyllium husk powder but I think they look cool haha. Thank you!

    Mine keeps turning out dough-y rubbery in the middle. I've tried different times and different heat, but get the same thing every time. They also blow up to a pretty good size and deflate when you open them. Any clues to what I am doing wrong?

    These are so easy to make and perfect when you want a bread fix. I have started to make them a little differently. I put the egg whites and vinegar in my Vitamix with the boiling water and blitz them just for ten seconds or so, and then I add that to the dry mixture and hand-mix everything. Somehow the whole consistency is better and the dough easier to handle.
    Mattman I prefer these cold. The texture is so much better.

    Yes, I do 1.5x recipe, quickly shaping it into a loaf as I put it into a silicone loaf tin.
    I whip up the egg whites and vinegar and then add the egg yolks. I also add 1 tbsp of sunflower/pumpkin seeds.
    Wait until it's cold before slicing it all up with an electric knife and freezing it. Good to put avo/bacon and egg on, and really yummy with cheese and salami for lunch.
