Ingredients

  • 1ยฝ lbs 650 g skinless, boneless chicken thighs
  • 1โ„3 cup 80 ml coconut oil
  • 2 tbsp 2 tbsp curry powder
  • 2 tbsp 2 tbsp ginger garlic paste
  • salt and pepper
  • ยพ lb 325 g cauliflower, chopped into small pieces
  • 1 (5 oz.) 1 (140 g) green bell pepper, choppedgreen bell peppers, chopped
  • 1ยพ cups 425 ml unsweetened coconut milk
  • ยผ cup (1โ„8 oz.) 60 ml (4 g) fresh cilantro

Instructions

  1. Cut the chicken into bite-sized pieces.
  2. Over medium heat, warm the coconut oil in a large skillet or wok pan. Add curry powder and garlic ginger paste. Fry for a minute to release the flavors.
  3. Add chicken and season with salt and pepper. Sautรฉ for about 10 minutes. Stir often to make sure all pieces are golden brown and thoroughly cooked through. Remove from pan and keep warm.
  4. Add cauliflower and bell pepper to the same pan. Fry the vegetables on medium high heat for a few minutes.
  5. Add the coconut milk. Stir to combine well. Reduce heat to medium low, cover pan and cook for about 45 minutes, or until cauliflower is tender.
  6. Season with salt and pepper. Add the chicken to the top of the stew.
  7. Serve with finely chopped cilantro sprinkled on top.

Tip!

    This is a really easy meal to prepare and it is so tasty, does it matter if you add extra spices? because I thought turmeric would be lovely.

    Hey. Try adding more crush RED Peppers, Salt AND way more Curry. Good luck
    Mine came out good but I let it simmer approx 20 mind after I added everything together

    Can i use curry leaves instead of curry powder?..and how much curry leaves should i use?...thanks..will try this today with Victoria's improvisation.

    We have not tested this recipe with curry leaves.

    We thought this dish was amazing! Donโ€™t know how anyone could think it bland. I followed the directions, used fresh pressed garlic, and then we each added salt to taste for our individual plate. Cooked for 4 people so had leftovers which were even better the following day.
    I did run into some time consuming snags. The meat took longer to clean up and dice than say breast meat would have. Will still use thighs ... but will factor in additional time. Meat and veg took longer to cook ... but who cares, really? They tasted great when done. Will adjust my plans.
    Gonna make a general comment to the chef .... Thank you for all the great tasting keto food recipes! I am having such fun disxovering a new way to cook! Iโ€™m someone who has survived many HCGDiet experiences and so REALLY appreciate your hard work and heart for the LCHF way of life.

    I'm pretty new to Keto, but well versed in cooking all sorts of food. This did look like it needed a bit of kick, so I added dried chilli peppers (a whole one and with all the seeds, too!) and a tablespoon of red thai curry paste to the coconut milk. Also, the strength of your curry powder makes a huge difference - I used madras. Apart from the lingering (but delicious) smell of curry for a couple of days, I'd be glad to eat this 7 days a week. It is super-delicious. And today I discovered a Diet Doctor recipe for garlic naan - guess what's on the menu for next week? Love your recipes DD!

    I just made the updated recipe for the first time and itโ€™s delicious, I am not a coconut fan but tried it with coconut milk anyway and it was not too overpowering I did add some fresh red chilli because I like spicy food

    Very good! I doubled the chicken and added maybe 1ยฝ tbsp of harissa paste. It gives a nice, strong heat. In the end, I just added the chicken back in the pot, stirred, and reheated it for maybe 5 minutes. The vegetables are super smooth so break down in a kind of paste that coats the meats. It's absolutely delicious!

    Is it 3/4 lb cauliflower after it is in floret form or the original "head" of cauliflower? Is there any way to list in "cups"?

    You can chop the stalks and the florets, so it's 3/4 lb total. With bulky ingredients like cauliflower or broccoli, the weight is a much more accurate measurement.
